1 garlic clove, chopped
1/2 teaspoon ground cumin

1 pound medium shrimp, deveined

4 whole-wheat tortillas

1 large ripe mango, chopped

8 corn tortillas, taco sized
1/2 large jicama, peeled and diced
1 orange, peeled and diced
1/2 medium red onion, diced
2 tablespoons cilantro, finely chopped
1/4 garlic clove, grated
1/2 tablespoon extra virgin olive oil
1 tablespoon lime juice
1 lime, juiced
2 tablespoons tequila
1/2 tablespoon honey
1/4 teaspoon cumin
1/4 cup extra virgin olive oil
1/2 garlic clove, grated
1/4 teaspoon salt
1/8 teaspoon freshly cracked black pepper
1/4 teaspoon cayenne pepper (optional)

Steps:

  • In a small bowl combine all ingredients for the shrimp marinade and stir. Place peeled and deveined shrimp in a resealable bag and add the marinade to coat the shrimp. Place sealed bag in the refrigerator for 20 minutes.

8 ounces sea scallops (fresh or frozen)
1/4 cup lime juice
1/4 cup snipped fresh cilantro
2 tablespoons cooking oil
2 tablespoons tequila
2 garlic cloves, minced
1 -2 teaspoon bottled hot pepper sauce
1/2 teaspoon dried oregano, crushed
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1 large onion, cut into thin wedges
1 large green sweet pepper, cut into bite-size strips
1 large sweet red pepper, cut into bite-size strips
1 1/2 cups sliced fresh mushrooms
6 warmed flour tortillas (9- to 10-inch)
6 ounces shredded monterey jack cheese (1-1/2 cups) or 6 ounces chihuahua cheese (1-1/2 cups)
