Steps:

  • In a large skillet, heat oil over medium-low heat. Cook shallot, stirring often, until softened, about 5 minutes.

3 tablespoons garlic-infused virgin olive oil
4 cups sweet grape tomatoes
Kosher salt and freshly cracked black pepper
3 cups low-sodium chicken stock
1 pound angel hair pasta or extra-thin egg noodles
4 ounces smoked mozzarella, roughly chopped

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Drizzle the olive oil over the grape tomatoes, season with salt and pepper and toss to coat. Place the tomatoes on the baking sheet and cook until skins turn a rich golden brown, about 10 minutes.
  • Meanwhile, heat the chicken stock over low heat. Add the noodles to a large skillet over medium heat, and pour in 1 ladleful of hot stock. Stir to prevent the noodles from sticking together as the stock cooks off. Once the noodles have absorbed all of the stock, add another 1 cup stock. Continue to stir and add the remaining stock 1 cup at a time, waiting until each addition is absorbed before adding more. Once all the stock has been absorbed, stir in the cheese and toss with the roasted tomatoes and their pan drippings. Serve hot.

3 garlic cloves, peeled
3 tablespoons extra-virgin olive oil
2 teaspoons coarse kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. In a medium bowl add the grape tomatoes and 3 garlic cloves. Drizzle with 3 tablespoons of olive oil and sprinkle with salt, pepper.
  • In a 9 by 13-inch glass baking dish, place the tomatoes and garlic cloves, ensuring they are in just 1 layer. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water, if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes.

  • Coarsely puree 1 cup grapes in processor. Transfer to sieve and press to extract 1/2 cup grape juice (discard solids). Cut remaining 1/2 cup grapes in half. Place flour in shallow baking dish. Dip tomato slices into flour, turning to coat. Sprinkle coated tomato slices with salt and pepper. Heat 3 tablespoons oil in each of 2 large skillets over medium-high heat. Add half of garlic to each skillet and saute until fragrant, about 30 seconds. Add 4 tomato slices to each skillet and fry until coating is golden, about 3 minutes per side. Transfer 2 tomato slices to each of 4 plates. Add grape juice, grape halves, and tomato sauce to 1 skillet.
