A former coworker named Maggie brought this delicious casserole to work one day. One bite and I was hooked! Definitely not low cal, but true comfort food!

1 (8 ounce) package Stove Top stuffing mix (Long grain and wild rice flavor)
1/2 cup butter
1 cup sour cream
1 (14 ounce) can chicken broth
1 (10 ounce) cream of chicken soup
2 chicken breasts, cooked and diced

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a 13x9 pan.
  • Sprinkle with 3/4 of the package of dry stuffing mix.
  • Evenly sprinkle chicken over stuffing.
  • Mix sour cream, chicken broth, cream of chicken soup and the seasonings from stuffing mix.
  • Pour evenly over chicken.
  • Sprinkle with remaining dry stuffing mix.
  • Bake for 1 hour, uncovered.

This casserole got me and my family our '10 minutes of fame'. It was entered in the "News Channel 7 Kitchen Recipes" and I had 6 news crew members here at my home eating it! Not only is it easy to make, it is truly delicious, too! Serve with a fresh green salad if desired.

1 (3 pound) whole chicken
8 ounces dry bread stuffing mix
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
1 ¼ cups chicken broth (from boiling the chicken)
1 cup evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer the deboned chicken meat in a lightly greased 9x13 inch baking dish. Sprinkle stuffing mix over the chicken layer.
  • In a large bowl mix together the soups, broth and evaporated milk. Stir well. Pour this mixture over the stuffing mix, making sure it gets to the bottom of the baking dish (poke around with a fork to let it saturate into the bottom layer). Bake in the preheated oven for 35 to 45 minutes, until it starts to bubble in the center.

If you can get savory from the Atlantic provinces to green your chicken; it would be the best. My father was a Newfoundlander and swore by their savory.

1 small onion, diced
½ cup diced celery, with leaves
6 slices stale bread, cut into cubes
1 tablespoon ground black pepper
1 tablespoon chopped fresh parsley
1 teaspoon dried sage
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon celery salt
½ cup melted butter
1 (3 pound) whole chicken
¼ cup chopped fresh savory

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir together onion, celery, bread, pepper, parsley, sage, rosemary, thyme, and celery salt in a large bowl; pour melted butter over bread mixture and stir to combine.

4 large eggs
1/4 cup yellow mustard
1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
8 boneless skinless chicken thighs (about 2 pounds)

WAFFLES:
1-3/4 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
1-3/4 cups 2% milk
2 large eggs, room temperature
1/2 cup butter, melted
2 teaspoons vanilla extract
Maple syrup

Steps:

  • Prepare stuffing mix according to package directions; cool., Meanwhile, in a shallow bowl, mix eggs and mustard. Place flour, salt and pepper in another shallow bowls. Dip chicken thighs in flour mixture to coat both sides; shake off excess. 4-2/3 cups water, divided
2 boneless skinless chicken breast halves
1 small onion, quartered
1 celery rib, cut into 1-inch pieces
1 large carrot, cut into 1-inch pieces
Salt and pepper to taste
2 cups herb stuffing mix
1/4 cup butter, melted
3 tablespoons Homemade Cream-Style Soup Mix
1/2 cup sour cream
1/2 cup frozen peas

Steps:

  • In a large saucepan, combine 4 cups water, chicken, onion, celery, carrot, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until chicken juices run clear and vegetables are tender. Remove and set aside chicken and carrot. Strain broth, discarding remaining vegetables. Set aside 1/2 cup chicken broth. (Discard or save remaining broth for another use.), In a bowl, combine stuffing mix and butter. In a microwave-safe bowl, whisk together the soup mix and the remaining water. Microwave, uncovered, on high for 1-1/2-2 minutes, whisking occasionally. Add sour cream and reserved broth. Stir soup mixture into stuffing mixture. Place half the stuffing mix in a greased shallow 5-cup baking dish; top with reserved chicken and carrots, then peas. Cover with remaining stuffing mix. This is a recipe I found on the back of a Campbells soup can years ago and have made this recipe many, many times and it is without a doubt a family favorite. Simple, quick and very tasty. Definately a meal to make if your pressed for time( I can usually get it on the table in under an hour from start to finish). In order to make this in a timely fashion, only use boneless, skinless chicken breasts or chicken tenderloins. I think these cook up more tender and quicker than breasts with the bone still in. 4 boneless skinless chicken breasts
10 3/4 ounces condensed cream of celery soup
1/2 cup milk
6 ounces Stove Top low-sodium chicken stuffing mix
1 cup sharp cheddar cheese
3 tablespoons butter, to fry the chicken in. add more throughout cooking process if needed
salt and pepper

Steps:

  • On your stove top, melt butter in frying pan and cook chicken breasts until done.Remove chicken from pan and set aside.
  • While chicken is cooking combine soup and milk in a bowl and mix together. Set aside.
  • In the same frying pan (just clean it out a bit) prepare the chicken stuffing according to package directions.
  • Once the stuffing is done, place chicken breasts on top of the stuffing that is still in the frying pan. Pour soup mixture over the chicken and sprinkle the cheese over the soup. Cover the pan with a lid and cook on medium low heat. Not to high or the stuffing will burn. Meal is ready when all the cheese is melted and the soup is hot and bubbly.
