BLACK PEPPER GRAVY

Black Pepper Gravy image

A creamy and peppery white gravy that will sure to please everyone! This goes great on fries, mashed potatoes, and meats! If you are wary of adding all of the pepper, add a teaspoon at a time and taste. I like mine really peppery, so I always use the 2 tablespoons. My mother doesn't like it so peppery, so she tends to use 1 or 1 1/2 tablespoons. The best part about this recipe is that you can adjust the spice to your liking!

Kittencal's Sawmill Gravy (Cream Gravy) image

I usually make this from pork sausages but any kind of pan drippings will do, the amounts listed will give you about 2 cups but can be easily doubled, it freezes well so make a double batch and freeze half for next time, just pop it in the microwave to defrost and warm when ready to use -- this is *very* good! ---- also see my recipe#145064

Tips:

  • Choose the right sausage: A good quality, flavorful sausage is essential for making a great sawmill gravy. Look for a sausage that is made with fresh, high-quality meat and has a good balance of spices.
  • Brown the sausage thoroughly: Browning the sausage gives it a nice, caramelized flavor that adds depth to the gravy. Be sure to brown the sausage over medium heat so that it has time to develop flavor without burning.
  • Use a good quality stock: The stock you use will make a big difference in the flavor of the gravy. Use a stock that is made with real bones and vegetables, and avoid using bouillon cubes or powders.
  • Season the gravy to taste: Be sure to taste the gravy before serving and adjust the seasoning as needed. You may need to add more salt, pepper, or other spices to taste.
  • Serve the gravy over your favorite foods: Sawmill gravy is a versatile gravy that can be served over a variety of foods. Try it over biscuits, mashed potatoes, chicken fried steak, or pork chops.
