Steps:

  • Preheat the broiler. Put the poblano cut-side down on a baking sheet and broil until the skin is browned in spots, about 5 minutes. Transfer to a bowl, cover with plastic wrap and let cool 5 minutes. Peel the skin off the poblano under cold running water, then chop into small pieces.

1 lb (1/2 kg) potatoes, sliced
13 1/2 oz (400 ml) can coconut milk
2 tablespoons red chili and vinegar paste
1 1/2 teaspoons sea salt
4 green onions, thinly sliced
6 to 8 button mushrooms, sliced
10 fresh curry leaves (optional)

Steps:

  • Soak the sliced potatoes in cold water for 30 minutes, then drain and set aside.
  • Butter or oil a casserole dish and preheat an oven to 350°F.
  • In a small bowl, whisk together the coconut milk, red chili and vinegar paste and salt.

1 pound russet or Yukon Gold potatoes, peeled, cut crosswise or lengthwise (depending on their size) into 1/4-inch-thick slices, and submerged in a bowl of cold water to prevent browning
4 scallions (green tops and white bulbs), thinly sliced crosswise
8 to 10 medium-size to large fresh curry leaves
