SEA SCALLOPS WITH BROWN BUTTER, CAPERS AND LEMON
This bright yet rich treatment for scallops came to The Times in a 2009 article about Kevin Zraly, the wine director of Windows on the World from 1976 to 2001. Mr. Zraly turned the restaurant into an international wine mecca: at the time it was destroyed, when the World Trade Center fell, its cellar held close to 100,000 bottles of 1,500 labels. Mr. Zraly and Michael Lomonaco, the chef at the restaurant (both of whom were not at work on Sept. 11 when the planes hit), worked together on hundreds of wine and food pairings throughout the years. This was Mr. Zraly's favorite of Mr. Lomonaco's creations. With it, he recommends a Puligny Montrachet, Olivier Leflaive.

Steps:
- Pat scallops dry with paper towels, and season lightly with salt and pepper. Heat a large sauté pan or nonreactive skillet over medium-high heat, and add oil. After 30 seconds, add scallops; do not crowd pan, work in batches if necessary. Sauté until well browned, about 2 minutes, then turn and cook other side. When second side is dark golden, transfer scallops to a platter; cover and keep warm.
- Return sauté pan to heat, add butter, and cook until it begins to foam and turn golden. Add shallot and capers, sauté for 1 minute, then add lemon juice (being careful to avoid sputtering butter) and chopped parsley.
- To serve, place 3 scallops on each of 4 warmed plates. Spoon butter, shallots and capers over scallops, and serve.

VEAL SCALLOPS WITH LEMON AND ARTICHOKES
Steps:
- Dredge the veal in the flour, shaking off the excess. In a large heavy skillet heat the oil and 2 tablespoons of the butter over moderately high heat until the foam subsides, in the fat sauté the veal in batches for 45 seconds on each side, or until it is golden, transferring it as it is cooked to a heated platter, and keep it warm. To the skillet add the lemon juice and the broth and simmer the mixture, stirring and scraping up the brown bits, for 2 minutes. Strain the mixture through a fine sieve into a small saucepan, add the artichokes, and simmer the sauce for 2 minutes. Remove the pan from the heat, swirl in the remaining 1 tablespoon butter, and season the sauce with salt and pepper. Divide the veal among 4 heated plates and nap it with the sauce.
Tips:
- Choose high-quality ingredients. Fresh, plump scallops, sun-dried tomatoes that are not too dry, and briny capers will make a big difference in the final dish.
- Sear the scallops properly. Sear them over high heat until they are golden brown and slightly caramelized on the outside, but still translucent in the center. This will give them a delicious crust and prevent them from overcooking.
- Don't overcrowd the pan. If you overcrowd the pan, the scallops will not sear properly and will end up steaming instead. Cook them in batches if necessary.
- Use a flavorful cooking liquid. The cooking liquid will add flavor to the scallops, so make sure it is something you enjoy. A simple combination of white wine, chicken broth, and lemon juice works well.
- Finish the dish with fresh herbs. Fresh herbs, such as parsley, basil, or thyme, will add a pop of color and flavor to the dish. You can also add a squeeze of lemon juice or a sprinkle of red pepper flakes for extra flavor.
Conclusion:
Scallops with Capers and Sun-Dried Tomatoes is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The combination of tender scallops, briny capers, and sweet sun-dried tomatoes is sure to please everyone at the table. So next time you're looking for a seafood recipe, give this one a try. You won't be disappointed!
