SMOKY FISH CHOWDER

Smoky Fish Chowder image

This chowder is a more complex and smoky interpretation of a classic New England fish chowder. Made with hot smoked paprika and a little Vermouth or white wine, it's got more spunk than a simpler, more authentic recipe, without losing the spirit of the sea. If you can't find fish stock, you can substitute bottled clam juice, or even a good, flavorful vegetable stock. Either way, you'll end up with perfectly balanced bowl of soup that needs nothing more than perhaps a few crackers on the side to make it shine.

Time 40m

Yield 3 to 4 servings

Number Of Ingredients 11

3 ounces bacon (about 3 to 4 slices), diced
3 tablespoons unsalted butter
2 medium leeks, white and light- green parts, thinly sliced
3/4 teaspoon kosher salt, more as needed
1/4 teaspoon hot smoked paprika
1/4 cup dry white vermouth or white wine
2 cups fish stock, store-bought or homemade
1/2 pound fingerling potatoes, sliced into 1/4-inch rounds
3 thyme sprigs
2 cups whole milk
10 ounces flaky white fish, such as flounder or cod, cut into 2-inch chunks

Steps:

  • In a heavy pot over medium-high heat, brown bacon until crisp, about 5 minutes. Use a slotted spoon to transfer bacon to a paper-towel-lined plate to drain.
  • Spoon off all but 2 tablespoons of bacon fat from the pot. Add butter and let melt. Add leeks and a pinch of salt; cook, stirring frequently, until leeks are soft, about 5 minutes. Stir in paprika; cook 1 minute. Pour in vermouth and simmer until almost completely evaporated, about 2 minutes. Stir in stock, 1 cup water, potatoes, thyme and remaining salt. Simmer until potatoes are tender, about 25 minutes.
  • Add milk and cooked bacon to pot; bring to a simmer. Add fish and cook until just opaque, 2 to 4 minutes. Use a fork to flake fish into large pieces. Taste and adjust seasoning if necessary. Remove thyme. Serve immediately.

SMOKED FISH CHOWDER

Smoked Fish Chowder image

Although we feature smoked fish in this chowder, the recipe works equally well with fresh fillets of such white fish as cod, haddock, halibut, or snapper.

SMOKED-FISH CHOWDER

Smoked-Fish Chowder image

We love Bar Harbor clam juice, which has no salt added and a gentle, briny flavor. It's a good stand-in for when you don't want to bother making fish stock (i.e., most of the time).

1 medium leek, halved lengthwise, thinly sliced crosswise
2 celery stalks, chopped
2 bay leaves

4 cups no-salt-added clam juice

CREOLE FISH CHOWDER

Creole Fish Chowder image

A nice hearty hot soup, great for lunch on a chilly day. Unlike a lot of fish chowder recipes, it contains no potatoes, so it's a good choice if you're trying to go light on starchy carbohydrates. Use more chili powder if you like. May be served with crackers.

Categories     Chowders

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup sliced celery
1 teaspoon chili powder (to taste)
1 (1 lb) can stewed tomatoes
1 cup water
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon Worcestershire sauce
1 (12 ounce) package frozen fish fillets (cod, sole, haddock, or whiting)
snipped parsley (optional)

Steps:

  • Heat the olive oil in a saucepan.
  • Add the onion, celery and chili powder, and sauté lightly about 8-10 minutes.
  • Stir in the tomatoes through worcestershire sauce.
  • Bring to a boil and add the frozen fish.
  • Let the soup simmer--separating the fish as it thaws--for about 15 minutes or until the fish flakes easily.
  • Sprinkle with parsley.

Tips:

  • Choose the right fish. For a smoky flavor, use a fish that is naturally oily, such as salmon, trout, or mackerel.
  • Use a good quality smoked fish. The flavor of the chowder will depend on the quality of the smoked fish you use. Look for smoked fish that is fresh and has a deep, smoky flavor.
  • Don't overcook the fish. Smoked fish is already cooked, so you just need to heat it through. Overcooking will make the fish tough and dry.
  • Use a variety of vegetables. Vegetables add flavor, texture, and nutrients to the chowder. You can use any vegetables you like, but some good choices include potatoes, carrots, celery, and onion.
  • Season the chowder to taste. The seasoning is important in any chowder, so be sure to taste it and adjust the seasonings as needed.
  • Serve the chowder hot. Smoked fish chowder is best served hot, with a side of crusty bread or crackers.

Conclusion:

Smoked fish chowder is a delicious and easy-to-make meal that is perfect for a cold night. It is also a great way to use up leftover smoked fish. With a few simple ingredients and a little bit of time, you can create a chowder that is sure to please everyone at the table.
