- Set oven to 375 degrees F.
- Grease two 7 inch sandwich tins.
- Cream the butter and sugar together in a bowl; add the orange rind.
- Beat in the eggs one at a time and whisk until the mixture is pale and fluffy Sift in about half the flour and add the wiskey; fold into the mixture.
- Sift in the remaining flour and fold inches.
- Divide the mixture equally between the two tins and smooth the tops.
- Bake for 20-25 minutes until light golden.
- Turn out on to a wire rack to cool.
- To make the icing:
- Put the butter into a mixing bowl; add the honey and one tablespoon of the orange juice.
- Sift in the icing sugar slowly and work the mixture gradually until the ingredients are combined.
- Sandwich the cakes together with half of the buttercream.
- Smooth the remainder over the top of the cake and decorate with the toasted almonds.

- Cream the butter and sugar together, add the orange rind and beat in the eggs, one at a time.
- Whisk until the mixture is pale and fluffy. Sift in half the self-raising flour and pour in the whiskey.
- Fold in to the mixture and sift in the remaining flour and again fold in gently.
- Grease two seven inch sandwich tins and divide the mixture between the two, smoothing the tops.
- Bake for 20-25 minutes in an oven at 375°F/190°C (Gas Mark 5) until the cake is a light golden color.
- Turn onto a wire rack to allow it to cool.
- Butter Icing:.
- Put the butter, honey and orange juice in a mixing bowl.
- Slowly sift in the sugar and work the mixture until well combined.
- To prepare the cake, use half the butter cream as a sandwich between the two halves of the cake and spread the rest smoothly on the top. Add the toasted almonds as decoration.
LEMON-WHISKEY BUNDT CAKE
Steps:
- Preheat oven to 350°F. Generously butter 10- to 12-cup Bundt pan; dust with flour.
- Stir cake mix and pudding mix in large bowl to blend. Beat in eggs, then milk, 1/4 cup whiskey, oil and lemon peel. Mix nuts with flour in small bowl; mix into batter. Transfer to prepared pan.
- Bake cake until tester inserted near center comes out clean, about 50 minutes. Set pan with cake on rack while preparing glaze.
- Stir sugar, butter and remaining 1/2 cup whiskey in heavy small saucepan over medium-low heat until butter melts, sugar dissolves and syrup bubbles, about 5 minutes. Spoon hot syrup over cake. - Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch Bundt pan or tube cake pan. Sprinkle the walnuts evenly in the bottom of the prepared pan.
- Place the cake mix, pudding mix, 1/2 cup water, vegetable oil, eggs, and 1/2 cup whiskey into a mixing bowl, and beat until well blended with an electric mixer, about 2 minutes. Pour the batter over the nuts in the pan.
- Bake in the preheated oven until the cake is set and the top springs back when pushed slightly, about 1 hour. When the cake is completely cool, run a paring knife between the cake and the edge of the pan. Hold the cake pan on its side and gently tap the sides of the pan against the counter to loosen it. - In small microwavable bowl, stir coffee powder and 2 tablespoons whiskey with whisk until combined. Microwave on High about 10 seconds or just until warm; set aside.
