CHEWY SUGAR COOKIES

I love sugar cookies that are crisp on the outside and very chewy on the inside. Do not try to roll these cookies out, they are meant to be shaped or dropped. This recipe can easily be made into snickerdoodle cookies by rolling the dough in cinnamon-sugar before baking.

BISCUIT SANDWICH COOKIES

A creamy chocolate filling lends these flaky, buttery cookies a touch of richness.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes 18

Number Of Ingredients 8

1 cup all-purpose flour, plus more for dusting
1/4 cup sugar
1/2 teaspoon coarse salt
1/4 cup (1/2 stick) cold unsalted butter, cut into small pieces
1/4 cup plus 1 tablespoon heavy cream
1/2 teaspoon pure vanilla extract
1 large egg yolk
6 ounces finely chopped milk chocolate, melted, or 1/2 cup chocolate-hazelnut spread (such as Nutella)

Steps:

  • Preheat oven to 325 degrees. Pulse flour, sugar, and salt in a food processor until combined. Add butter, and pulse until the mixture resembles coarse crumbs. With machine running, pour in 1/4 cup cream and the vanilla, and process until dough just comes together.
  • Roll dough between lightly floured sheets of parchment until 1/16 inch thick. Using a 2 1/2-inch fluted cutter, cut out 36 rounds, gathering together scraps and rerolling if needed. Space 1 inch apart on parchment-lined baking sheets. Chill in freezer until firm, about 15 minutes.
  • Whisk together egg yolk and remaining tablespoon cream. Brush onto tops of cookies. Bake until golden brown, 15 to 20 minutes. Let cool. (Unfilled cookies can be stored in an airtight container up to 4 days.)
  • Turn over half the cookies, and spread 1 heaping teaspoon chocolate or chocolate-hazelnut spread onto each. Top with remaining cookies. Refrigerate until set, about 15 minutes (or up to 2 days; cookies will soften slightly with longer storage).

Tips:

  • Mise en Place: Before you start baking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid any mishaps.
  • Follow the Recipe Carefully: Scroggins' recipes are generally straightforward, but it's important to follow them carefully. Don't substitute ingredients or change the measurements unless you know what you're doing.
  • Use Good Quality Ingredients: The quality of your ingredients will have a big impact on the final product. Use fresh, high-quality ingredients whenever possible.
  • Don't Overmix: Overmixing can toughen your biscuits and cookies. Mix just until the ingredients are combined.
  • Chill Your Dough: Chilling the dough before baking helps to develop the flavor and texture. If you're short on time, you can chill the dough for at least 30 minutes, but longer is better.
  • Bake at the Right Temperature: Make sure your oven is preheated to the correct temperature before baking. This will help to ensure that your biscuits and cookies bake evenly.
  • Don't Overbake: Overbaking can dry out your biscuits and cookies. Bake them just until they are done. You can check for doneness by inserting a toothpick into the center of the biscuit or cookie. If it comes out clean, they're done.

Conclusion:

Scroggins' recipes are a great way to make delicious, homestyle biscuits and cookies. With a little planning and care, you can easily create these classic treats in your own kitchen. So next time you're in the mood for something comforting and delicious, give one of these recipes a try. You won't be disappointed!
