Time 40m

Yield 8 servings

Number Of Ingredients 6

Unsalted butter, for baking dish
1 large bunch asparagus, about 1 1/2 pounds, trimmed to even lengths and blanched for 4 minutes in boiling, salted water
Gray salt and freshly ground pepper
Seasoned bread crumbs, recipe follows
8 thin slices prosciutto
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter a shallow baking dish that is long enough to hold the asparagus. Season the asparagus with salt and pepper, to taste.
  • Divide the asparagus into 8 equal bundles. Arrange 2 slices of the prosciutto on a work surface so they slightly overlap each other. Place an asparagus bundle on top and roll up carefully in the prosciutto. Arrange in the prepared baking dish. Flatten the top of each bundle slightly and sprinkle with 1/4 of the seasoned bread crumbs. Drizzle with the olive oil.
  • Roast in the oven until heated through and crisp, about 10 minutes. Serve at once on a platter with the sliced ham.
  • 1 1/2 teaspoons extra-virgin olive oil
  • 2 cloves minced garlic
  • 1/4 cup fine dried bread crumbs
  • Pinch gray salt
  • Freshly ground pepper
  • 1 tablespoon finely chopped fresh parsley leaves
  • 1 teaspoon freshly grated lemon zest
  • 1 tablespoon freshly grated Parmesan
  • To make the seasoned bread crumbs, heat the olive oil in a small skillet over medium-high heat until hot. Tilt the pan and then add the minced garlic and saute briefly until pale gold. Add the bread crumbs, season with salt and pepper, and lower the heat to medium. Cook, stirring occasionally, until the bread crumbs are toasted, about 3 minutes. Pour into a small bowl and add the parsley, lemon zest, and Parmesan. Toss well. (The crumbs keep, tightly sealed and refrigerated, for several days.)

SEASONED BREAD CRUMBS

Posted for Zaar World Tour 2005. Quick & easy way to make fine breadcrumbs homemade! Not that I think these are uniquely Irish bread crumbs, but I was glad to have come across a recipe for homemade seasoned bread crumbs in The New Irish Table and thought many of you would be too. Any bread should work with this recipe, but the recipe specified baguette. Instructions for using toasted bread instead of dried are my own. Toasting instructions should be reduced for thinner sliced bread (less than 3/4-1 inch). I tried this recipe using toasted sourdough bread and my only recommendation is that you process in batches. Otherwise, outcome was fantastic!

Time 15m

Yield 1 cup, 4 serving(s)

Number Of Ingredients 5

5 -6 slices stale bread (baguette) or 5 -6 slices fresh bread, cut into 1/2 inch cubes (baguette)
1 teaspoon dried parsley
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
salt and pepper

Steps:

  • If using fresh baguette, place slices on a cookie sheet in a preheated 400 degree Fahrenheit oven for about 10-12 minutes. Let cool slightly and cut into cubes.
  • Place cubes of stale or toasted baguette in a blender. Add herbs, salt and pepper and process for 15-20 seconds, or until the mixture is ground into fine crumbs.

Tips:

  • Choose the right bread: Stale bread is best for making breadcrumbs because it has less moisture, which helps to create a crispy texture. French bread, Italian bread, and sourdough bread are good choices.
  • Use a food processor or blender: This is the easiest way to make breadcrumbs. Just pulse the bread until it reaches the desired consistency.
  • Season your breadcrumbs: You can add any combination of herbs, spices, and seasonings to your breadcrumbs to create different flavor profiles. Some popular options include garlic powder, onion powder, paprika, and Italian seasoning.
  • Toast your breadcrumbs: Toasting your breadcrumbs in the oven or on the stovetop will give them a golden brown color and a nutty flavor.
  • Store your breadcrumbs: Breadcrumbs can be stored in an airtight container at room temperature for up to a month, or in the freezer for up to a year.

Conclusion:

Seasoned breadcrumbs are a versatile ingredient that can be used in a variety of dishes. They can be used to coat chicken, fish, and vegetables before frying or baking, or they can be added to soups, stews, and casseroles. They can also be used as a topping for pasta dishes, salads, and pizzas. With so many uses, it's no wonder that seasoned breadcrumbs are a staple in many kitchens.
