Sweet and Sour Stuffed Cabbage image

Time 5h5m

Yield 10

Number Of Ingredients 18

⅔ cup uncooked white rice
1 cup water
2 heads cabbage, cored
3 pounds ground beef chuck
2 eggs
1 ½ teaspoons garlic powder
salt and pepper to taste
½ cup ketchup
1 onion, sliced
3 (28 ounce) cans crushed tomatoes
½ cup raisins
1 teaspoon citric acid powder
1 ½ teaspoons garlic powder
salt and pepper to taste
½ cup ketchup
½ cup white sugar
1 cup ketchup
½ cup white sugar, or to taste

Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Fill a large pot with water and bring it to a boil. Boil the heads of cabbage, one at a time, until softened but still firm, about 5 minutes. Remove and let cool for 15 minutes.
  • Combine the ground beef, eggs, cooked rice, 1 1/2 teaspoons of garlic powder, salt and pepper, and 1/2 cup ketchup in a bowl. Mix with your hands until well combined.
  • Prepare the cabbage leaves by shaving a slice off of the large vein in the center of the leaves so they'll be easier to roll. Place a heaping spoonful of the filling in the center of the leaf. Fold in the left and right edges and roll up the leaf from the bottom, forming a tight cylinder. Secure with toothpicks if necessary. Continue filling and rolling the leaves; save the smaller cabbage leaves and set them aside.
  • Chop the reserved cabbage leaves. Place the chopped cabbage in a large pot. Add the sliced onion, crushed tomatoes, raisins, sour salt (citric acid powder), salt and pepper, 1/2 cup ketchup, and the remaining 1 1/2 teaspoons garlic powder. Stir in 1/2 cup of white sugar and bring the mixture to a boil.
  • Taste the sauce and adjust the sweetness, if desired, by adding the additional 1/2 cup of sugar. Place the cabbage rolls into the sauce. Pour the remaining 1 cup of ketchup on top of the rolls. Cover the pot, and reduce the heat to a simmer.
  • Cook the rolls for 3 hours, basting the rolls every half hour.

HALUPKI (STUFFED CABBAGE)

Halupki (Stuffed Cabbage) image

Halupki, also known as stuffed cabbage on the Russian/Ukranian side of my family, is a dish made of rice, beef, and pork encased in cabbage drizzled with a thin, sweet tomato sauce. My grandma Eugenia is 98 and she taught me how to make this comfort food classic. Every family has their own twist on this traditional dish. I hope you enjoy these with mashed potatoes just as we always do in my family!

PALEO STUFFED CABBAGE

Paleo Stuffed Cabbage image

I love stuffed cabbage (galumpkis) and wanted to share my version of paleo stuffed cabbage. I also love zucchini so I find a way to incorporate it in many meals. I made this for a dinner party and everyone was commenting on how delicious and light they were but nobody realized that rice was omitted and I used cauliflower and zucchini. I was hoping for leftovers but that was not the case!

Time 2h35m

Yield 8

Number Of Ingredients 22

1 (28 ounce) can crushed San Marzano tomatoes
1 cup low-sodium chicken broth
1 clove garlic, minced
1 teaspoon dried parsley
1 (8 ounce) can tomato paste
1 teaspoon sea salt
½ teaspoon ground black pepper
1 pound ground beef
1 pound ground pork
1 small yellow onion, chopped
3 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon dried parsley
½ teaspoon sea salt
¼ teaspoon ground black pepper
2 tablespoons sea salt
¾ head cauliflower
2 heads green cabbage
1 zucchini
2 eggs
¼ cup almond flour

Steps:

  • Combine tomatoes, chicken broth, 1 clove garlic, and 1 teaspoon parsley in a saucepan; bring to a boil. Add tomato paste. Fill the can 1/4 of the way with hot water; swirl to dissolve any tomato paste remaining in the can and pour into the saucepan. Season sauce with 1 teaspoon salt and 1/2 teaspoon pepper. Simmer until flavors combine, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix beef, pork, onion, 3 cloves garlic, basil, oregano, 1/2 teaspoon parsley, 1/2 teaspoon salt, and 1/4 teaspoon pepper together in a large bowl.
  • Bring a large pot of water to a boil; add 2 tablespoons sea salt. Add cauliflower; cook for 5 minutes. Transfer to a bowl using a slotted spoon. Add 1 head of cabbage to the boiling water; cook for 5 minutes. Remove with the slotted spoon. Repeat with second cabbage. Separate cabbage leaves.
  • Shred cauliflower and zucchini in a food processor fitted with the shredder disk. Add enough to the beef mixture so there is an equal ratio of both. Stir in eggs and almond flour.

Tips:

  • Choose the right type of cabbage: Look for a head of cabbage that is firm and has tightly packed leaves. Savoy cabbage or green cabbage are good choices.
  • Blanch the cabbage leaves: This will help to soften the leaves and make them more pliable, making it easier to roll the cabbage rolls.
  • Use a variety of fillings: The traditional filling for stuffed cabbage is a mixture of ground beef, rice, and vegetables, but you can also use other fillings, such as ground turkey, pork, or lamb. You can also add different vegetables, such as carrots, celery, or mushrooms.
  • Season the filling well: Be sure to season the filling with plenty of salt, pepper, and other herbs and spices. This will help to give the stuffed cabbage rolls flavor.
  • Roll the cabbage rolls tightly: This will help to prevent the filling from leaking out during cooking.
  • Cook the cabbage rolls in a flavorful sauce: The sauce will help to keep the cabbage rolls moist and flavorful. You can use a variety of sauces, such as tomato sauce, cream sauce, or even a simple broth.

Conclusion:

Stuffed cabbage is a delicious and versatile dish that can be made with a variety of fillings and sauces. By following these tips, you can make perfect stuffed cabbage rolls that your family and friends will love. This hearty and comforting dish is perfect for a weeknight meal or a special occasion.
