SHELLY'S CILANTRO FETA DIP
This is another adoption from Shelly's recipes. Shelly had suggested it to me while I was planning for a party, and I prepared it to receive rave reviews from my guests. (I guess that they liked cilantro and feta. LOL) The immeasurably cute Shelly's comments from the time of posting are as follows: From Southern Living. I made this once for a co-worker's birthday only to find out later she hates cilantro AND feta! Oops! If you like those ingredients, you'll like this simple dip. Did not include optional soaking of feta in milk in prep or cook time. Cook time is the chilling time.

Steps:
- Mix first 3 ingredients and 1 tablespoon cilantro in large bowl. Add shrimp; toss to coat. Let stand 10 minutes. Prepare barbecue (medium-high heat) or preheat broiler. Remove shrimp from marinade. Skewer 6 shrimp on each of 2 skewers. Skewer onions on remaining skewer. Season shrimp and onions with some of marinade. Grill onions until tender and cooked through, about 3 minutes per side. Add shrimp to grill; cook until pink, about 2 minutes per side. Coarsely chop onions. Remove shrimp from skewers; divide between plates. Bring marinade to boil. Mix in onions, cheese and remaining 1 1/2 tablespoons cilantro. Spoon onion mixture over shrimp.
Tips:
- Fresh ingredients make a difference: Always use the freshest cilantro and feta you can find. Fresh herbs and cheese will give your dip the best flavor.
- Don't over-process the dip: A few pulses in the food processor are all you need to combine the ingredients. Over-processing will make the dip too smooth and lose its texture.
- Serve the dip with a variety of dippers: Pita chips, crackers, vegetables, and even fruit are all great options for dipping into cilantro feta dip.
- Make the dip ahead of time: Cilantro feta dip can be made up to 2 days ahead of time. Just store it in the refrigerator until you're ready to serve.
Conclusion:
Cilantro feta dip is a delicious and easy-to-make appetizer that's perfect for any occasion. With its creamy texture, tangy flavor, and fresh herbs, this dip is sure to be a hit at your next party or gathering. So next time you're looking for a quick and easy snack or appetizer, give cilantro feta dip a try. You won't be disappointed!
