2 pounds boneless skinless chicken breast (cut into large chunks)
½ cup plain whole milk yogurt
¼ cup lemon juice
¼ cup olive oil
6 garlic cloves (crushed)
1 tablespoon tomato paste
1 teaspoon paprika
¾ teaspoon cinnamon
½ teaspoon oregano
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon black pepper

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

Grilled, marinated, Mediterranean-style chicken. This recipe was inspired by the Lebanese restaurant for which I used to work. Its flavor is so unique and outside the box and will have everyone trying to guess the ingredients because its flavor is so mouth watering! Goes great with a plain or bland rice pilaf. Also fatoosh or tabbouleh salad goes well with it as a side. You'll need metal skewers or a grilling basket (I prefer the basket).

6 skinless, boneless chicken breast halves
salt to taste
8 large cloves garlic, chopped, or more to taste
½ cup olive oil
2 tablespoons apple cider vinegar, or more to taste
2 tablespoons red wine vinegar, or more to taste
2 tablespoons white balsamic vinegar, or more to taste
2 tablespoons lemon juice, or more to taste
1 tablespoon red pepper flakes

Steps:

  • Season chicken breasts with salt. Cut each breast into 3 to 4 pieces. Place in a large bowl; stir in garlic. Add olive oil, apple cider vinegar, red wine vinegar, white balsamic vinegar, lemon juice, red pepper flakes, allspice, sumac, and pomegranate syrup. Mix well with your hands.

1 pound chicken breasts
½ cup mayonnaise
¼ cup ketchup
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon paprika
2 tablespoons minced garlic
1 tablespoon freshly grated ginger
1 teaspoon ground black pepper
1 teaspoon cumin
½ teaspoon turmeric
2 teaspoons salt
¼ teaspoon nutmeg (preferably, freshly grated)

Steps:

  • Slice the chicken breasts into 2-inch cubes and place them into a medium bowl.
  • Add in the remaining ingredients into the bowl, with the chicken.
  • Using a spatula, mix well, and scrape off the sides of the bowl.
  • Using cling wrap, cover the bowl and place into the fridge to marinate for 2 hours or overnight.
  • Heat a grill to medium heat.

  • Place the chicken kabobs onto the grill and cook for 15 to 25 minutes or until no longer pink on the inside, turning the kabobs every 5 minutes.
  • If you are using an oven broiler, Prepare the chicken as directed. Place the chicken kebobs on a deep-dish pan that's filled about 1/4 inch deep with water. Place the deep-dish pan 1 rack lower than the top oven rack, and broil on high for 15 to 25 minutes or until no longer pink on the inside, turning the kabobs every 5 minutes.
