Shortbread tarts are a classic Scottish dessert that is perfect for any occasion. Their buttery, crumbly crust and sweet, jammy filling make them a favorite among people of all ages. While there are many different recipes for shortbread tarts, they all share a few key ingredients, including flour, butter, sugar, and eggs. The dough is typically made by creaming together the butter and sugar until light and fluffy, then adding the eggs one at a time. The flour is then added and mixed in until the dough just comes together. The dough is then chilled before being rolled out and baked in tart pans. Once the tart shells are baked, they are filled with a variety of fillings, such as jam, fruit curd, or custard.

Yield 3 dozen tarts

Number Of Ingredients 10

TART:
1 cup butter
1/2 cup icing sugar
1 1/2 cups flour
1 Tbsp cornstarch
LEMON FILLING:
2 eggs
2 Tbsp butter
1 cup sugar
juice of 2 lemons and a bit of peel

Steps:

  • TART:Mix ingredients in mixmaster. Don't roll but pat into muffin tins with your fingers to form shell. Prick the bottoms with a fork and bake 20 minutes at 300-325 degree F. While baking, prick bottoms again if the shells puff up. These may be made in large quantity and frozen. Fill with lemon filling or mincemeat. LEMON FILLING: Combine eggs, butter, sugar and lemon juice in a pan and bring to a boil. Reduce heat and cook, stirring constantly for 15 minutes. Cover and cool in refrigerator. This filling will keep well in refrigerator for a long time. Only fill the shells as they are required.

Tips:

  • Use high-quality butter for a richer flavor. Unsalted butter is best so you can control the amount of salt in the recipe.
  • Make sure the butter is cold before creaming it with the sugar. This will help create a flaky crust.
  • Work the dough as little as possible. Overworking the dough will make it tough.
  • Chill the dough before rolling it out. This will help prevent the dough from sticking to the rolling pin.
  • Use a sharp knife to cut out the tart shells. This will help prevent the dough from tearing.
  • Bake the tart shells until they are golden brown. This will help ensure that they are cooked through.
  • Let the tart shells cool completely before filling them. This will help prevent the filling from making the crust soggy.
  • Use a variety of fillings for your shortbread tarts. Some popular options include fruit preserves, chocolate ganache, and whipped cream.
  • Shortbread tarts can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.

Conclusion:

Shortbread tarts are a delicious and versatile dessert that can be enjoyed by people of all ages. With a flaky crust and a variety of fillings, shortbread tarts are perfect for any occasion. Whether you are looking for a simple snack or an elegant dessert, shortbread tarts are sure to please.
