2 quarts chicken broth
2 tablespoons rosemary
5 cloves garlic, minced
1 teaspoon ground black pepper
1 teaspoon celery seed
½ teaspoon fennel seed
1 cup clam juice
½ (6 ounce) can tomato paste
1 cup butter
1 cup white wine
2 pounds shrimp, with tails
1 (1 pound) loaf French bread

Steps:

  • Pour broth into a large pot, and mix in rosemary, garlic, pepper, celery seed, fennel seed, clam juice, tomato paste, and butter. Bring to a boil, reduce heat to low, and simmer 1 hour, stirring occasionally.
  • Stir wine into the soup, and continue to simmer and occasionally stir 2 hours.
  • Just before serving, stir in shrimp. Continue cooking 3 minutes, or until shrimp are opaque. Serve with bread for soaking up all the yummy broth.

2 tablespoons canola oil
2 tablespoons all-purpose flour
3 celery ribs, thinly sliced
1 medium onion, chopped
1 small green pepper, chopped
2 green onions, thinly sliced
2 garlic cloves, minced
4 cans (14-3/4 ounces each) cream-style corn
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 bay leaf
1/8 to 1/4 teaspoon white pepper
1/8 to 1/4 teaspoon cayenne pepper
Dash hot pepper sauce
3 cups cooked small shrimp
1/3 cup minced fresh parsley

Steps:

  • Heat oil in a heavy saucepan over medium heat. Carefully add flour; cook and stir until golden brown, about 6-8 minutes. Reduce heat to low. Add the celery, onion, green pepper and green onions; cook and stir for 5 minutes. Add garlic; cook 1 minute longer. Add the corn, tomatoes, bay leaf, white pepper, cayenne and pepper sauce; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes. , Stir in shrimp and parsley; heat through. Please try to use the fire-roasted tomatoes and fresh spinach, they give such great flavor. They carry the Muir Glen brand at Whole Foods and Wal-Mart Supercenter. I hope you enjoy it!

6 green onions, chopped
2 tablespoons butter
4 cups chicken broth
1 small jalapeno, seeded and chopped
5 carrots, peeled and sliced
5 celery ribs, chopped
1 (25 ounce) jar unsweetened applesauce
1 (15 1/2 ounce) can chickpeas, rinsed and drained
1 cup plain yogurt
1 (14 1/2 ounce) can diced fire-roasted tomatoes, undrained (I like Muir Glen brand)
1 teaspoon fresh lime juice
1/2 teaspoon balsamic vinegar
1 teaspoon Lawry's Seasoned Salt
1/2 teaspoon fresh ginger, peeled & finely minced
4 cups fresh spinach (6 oz bag)

Steps:

  • Melt butter in a large soup pot.
  • Saute onions and jalapeno in butter.
  • Add your broth and turn down to med. heat to a simmer.
  • Add carrots, celery, and applesauce.
  • Simmer for 30 minutes, stirring occasionally, until carrots are tender.
  • In a medium bowl; mix together yogurt, ginger, chickpeas, tomatoes, lime juice, Lawry's, and vinegar. Stir well.
  • After the 30 minutes are up, add your yogurt mix and spinach to the soup. Stir very well and bring back up to a boil.
  • Cook for 10 more minutes, remove from heat and serve.
