- Combine water and rice in heavy medium saucepan. Season lightly with salt and bring to boil. Reduce heat to low; cover and cook until rice is tender, about 40 minutes. Drain and cool.

- For the Cajun seasoning: Combine the garlic powder, oregano, paprika, allspice, if using, 1 teaspoon salt and 1/2 teaspoon black pepper.
- For the salad: Combine 1 teaspoon Cajun seasoning with the rice and cook according to the rice package directions. Set aside in a bowl.

- In a saucepan, combine the brown rice with the cold water, salt, and bring to a boil. Reduce heat to very low and cover. When shrimp are cool, peel them and set aside, sprinkled with a tsp of the lemon juice and a pinch of the coarse salt and pepper. Make sure the rice is cool, and add to it the garbanzo beans, tomato and cucumber. In a small bowl, combine the rest of the lemon juice with the herbs and zest. Mix in the oil, salt and pepper. Add the shrimp to the rest of the ingredients and drizzle the dressing over all. Combine thoroughly and season to taste. Serve at once, or refrigerate up to two days.
