Serve with Spanish rice and fresh warm flour tortillas! You can also use grilled shrimp or sausage as your meat and save time by using tortilla chips in the bag, but the taste won't be authentic.

2 pounds beef skirt steak
2 pounds boneless chicken thighs
2 teaspoons fajita seasoning
2 ½ teaspoons garlic powder, divided
2 cups refried beans
salt to taste
lemon pepper to taste
4 avocados - peeled, pitted, and mashed
1 cup corn oil
24 corn tortillas
1 medium green bell pepper, chopped
1 medium onion, chopped
⅓ bunch cilantro, chopped
1 (16 ounce) package shredded American cheese
12 ounces sour cream
2 large tomatoes, chopped
4 pickled jalapeno peppers, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub beef and chicken with fajita seasoning and 2 teaspoons garlic powder. Cut beef and chicken into 1-inch strips, and set aside.
  • In a saucepan, warm refried beans over medium-low heat.
  • Stir salt, lemon pepper, and 1/2 teaspoon garlic powder into mashed avocados. Set aside.
  • Heat corn oil in a deep skillet over medium-high heat. Cut tortillas in half, then cut in half again to make 4 triangular pieces per tortilla. Place into the skillet as many tortilla pieces as will fit without overlapping, and fry until crisp; repeat this process until all the tortilla pieces have been fried. Remove crisp tortillas to paper towels. Discard oil, and wipe out skillet.
  • Return skillet to medium heat, and stir in beef, chicken, bell pepper, and onion. Cook, stirring occasionally, about 7 minutes; then stir in cilantro.
  • Layer the tortilla pieces along the bottom of a large baking dish. Spread refried beans evenly over tortilla pieces. Sprinkle cheese over beans, then spread meat mixture evenly on top.
  • Bake in preheated oven until cheese and beans are bubbly, about 20 minutes. Remove from oven, and drop sour cream and guacamole by tablespoonfuls in various places across the top. Sprinkle tomatoes and jalapenos on top.

3 ears corn, husked and cut crosswise into 6 pieces
¼ cup unsalted butter, melted
4 cloves garlic, minced
1 tablespoon old bay seasoning
1 lb medium shrimp, peeled and deveined
12.8 oz smoked andouille sausage, 1 package, thinly sliced
1 lemon, cut into wedges
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a large pot of boiling salted water, cook potatoes until just tender and parboiled, about 10-13 minutes. Stir in corn during the last 5 minutes of cooking time and drain well.

1 large onion, halved
1 head garlic, sliced in half crosswise to expose the cloves
1/4 cup Old Bay seasoning
1 tablespoon whole black peppercorns
1 teaspoon fine sea salt, plus more as needed
1/2 teaspoon cayenne
6 tablespoons unsalted butter (3/4 stick)
1 lemon, halved
1 tablespoon minced shallot (optional)
1 tablespoon Tabasco or Crystal hot sauce, plus more as needed
2 pounds large shell-on shrimp
Crusty bread, for serving

Steps:

  • Bring 6 cups water with the onion, garlic, Old Bay, peppercorns, salt and cayenne to a boil in a large pot. Cover and simmer for 10 minutes to allow the flavors to develop.

1/3 cup fresh lemon juice
1 teaspoon Chinese chili paste with garlic (sold in Asian stores)
2 teaspoons Japanese soy sauce
8 fresh jumbo shrimp, each about 1 1/2 ounces: botan, Santa Barbara or tiger shrimp, shelled and deveined
Sea salt
Freshly ground black pepper
1 branch broccoli, stem removed, cut in small florets
2 tablespoons clarified butter
3 1/2 ounces enoki mushrooms
10 chives cut in 1 1/2-inch pieces

Steps:

  • Combine lemon juice, chili paste and soy sauce, and set aside.
  • Briefly rinse shrimp in cold water, drain them, and sprinkle with a little salt and pepper. Set aside.
  • Have a medium-size bowl of ice water ready. Bring a small pot of water to a boil. Add pinch of salt. Add broccoli, and cook 1 1/2 minutes. Drain, and transfer to ice water. Drain well.
  • Place a medium-size skillet over high heat. Add butter. Add shrimp, and sauté, turning once, until shrimp are nearly cooked through and opaque, about 3 minutes. Add lemon juice mixture. Stir-fry briefly. Remove shrimp from pan with a slotted spoon, draining well. Cook liquid in pan over high heat a minute or two, until reduced and slightly thickened. Add broccoli, mushrooms, chives and shrimp. Stir-fry to coat with sauce. Transfer to serving dish and serve.

12 large pre cooked cleaned & devained shrimp
1 jalapeno
1 bunch green onion
2 roma tomatoes
2 cucumbers
1/2 bunch cilantro
1 lime
2 teaspoons tapatio hot sauce
1 red bell pepper
1 teaspoon salt
1 teaspoon garlic salt
2 teaspoons tajin mexican fruit seasoning

Steps:

  • Wash & soak your large shrimp for about 5 minutes in cold water.
  • Dice your tomatoes, cucumbers into bite size pieces add to bowl.
  • Dice your green onion into small pieces, you will want to use the hole onion except for the stem.
  • Dice & devain you jalapeno, & bell pepper you don't want the seeds.

1 (8 ounce) bag tortilla chips
1 lb ground beef or 1 lb shredded chicken
1 (16 ounce) can refried beans
1 (8 ounce) bag mexican cheese
green olives
black olives
avocado
tomatoes
onion
jalapeno

Steps:

  • Preheat oven to 400 degrees.
  • Cook beef on medium-high heat until browned (or boil/bake chicken and shred it up).
  • Cook refried beans as directed on can.
  • Layer a non-greased casserole dish with tortilla chips. Spread with refried beans until covered, then sprinkle beef/chicken on top.
