SHRIMP DE JONGHE

Shrimp De Jonghe image

A dish my mother made for special occasions. According to some sources, shrimp de jonghe was invented at the turn of the 20th century by the De Jonghe brothers, Belgian immigrants and owners of DeJonghe's Hotel and Restaurant in Chicago. This garlicky, herbed casserole is one of the earliest Windy City specialties. This dish can be served as an appetizer or main course.

Tips:

  • Use fresh shrimp: Fresh shrimp will give your casserole the best flavor. If you're using frozen shrimp, be sure to thaw them completely before cooking.
  • Cook the shrimp properly: Shrimp should be cooked until they are pink and opaque. If you overcook them, they will become tough and rubbery.
  • Use a good quality Dijon mustard: The Dijon mustard is what gives this casserole its signature flavor. Be sure to use a good quality mustard that has a sharp, tangy flavor.
  • Don't overcook the casserole: The casserole should be cooked until the shrimp is cooked through and the sauce is bubbly. If you overcook it, the shrimp will become tough and the sauce will become thick and gloppy.
