1/4 cup reduced-fat mayonnaise

1-1/2 teaspoons minced fresh dill

Fresh dill sprigs, optional

Tips:

  • Choose the right cucumbers: Use firm, medium-sized cucumbers that are fresh and have a deep green color. Avoid cucumbers that are too large or have yellow spots, as these may be bitter.
  • Use a sharp knife: A sharp knife will make it easier to slice the cucumbers and remove the seeds. A dull knife can cause the cucumbers to tear.
  • Don't overcook the shrimp: Overcooked shrimp will be tough and rubbery. Cook the shrimp just until they are opaque and pink, about 2-3 minutes per side.
  • Use fresh herbs: Fresh herbs, such as dill, parsley, and basil, will add a lot of flavor to the shrimp stuffing. If you don't have fresh herbs, you can use dried herbs, but use only about 1/3 of the amount called for in the recipe.
  • Serve the cucumber cups immediately: Cucumber cups are best served immediately after they are made. The cucumbers will start to wilt after a few hours, so it's best to make them just before you plan to serve them.

Shrimp stuffed cucumber cups are a delicious and refreshing appetizer that is perfect for any occasion. They are easy to make and can be customized to your own taste preferences.
