Time 30m

Yield 4 servings

Number Of Ingredients 9

4 portobello mushroom
2 scallions, white and green parts
1 1/4 pounds frozen peeled and deveined shrimp, thawed, tails removed, blotted dry
Zest of 1 lemon, finely grated
1 tablespoon lemon juice
Freshly ground black pepper
Salt
2 teaspoons rice bran oil, grapeseed oil or expeller-pressed canola oil
Lemon wedges for serving

Steps:

  • Preheat grill to medium, about 350 to 400 degrees F.
  • Rinse the tops of the mushrooms briefly under running water, rubbing off any debris, and pat dry. Gently remove the gills with a spoon (the gills are edible, but their dark shade can muck up the color of the filling). Pluck off the stems, trim the bottom of the stems, and reserve. Trim the rims of the mushrooms with kitchen shears, for a straighter edge. Reserve scraps. Place mushroom caps on a plate.
  • Slice finely slice enough of the green scallion tops to equal 2 tablespoons and reserve for garnish. Place the remaining white and green scallion parts in a large food processor and pulse to chop. Add the mushroom stems and scraps, shrimp, lemon zest and juice, and freshly ground black pepper to taste. Pulse until the shrimp is nearly ground, with some small pieces remaining.
  • Brush the mushroom tops with oil, turn them over, then sprinkle lightly with salt and pepper. Divide the shrimp mixture equally among the mushrooms and smooth with the back of a spoon. Sprinkle with salt.
  • Lightly oil the area of the grill that you will be using. Grill the stuffed mushrooms until the shrimp centers turn white and firm when pressed gently and the mushrooms are tender, about 10 to 12 minutes. Allow the mushrooms to rest a few minutes before serving. Sprinkle with sliced scallions and serve with lemon wedges.

GARLIC SHRIMP WITH RED PEPPERS AND WILD MUSHROOMS

Garlic Shrimp with Red Peppers and Wild Mushrooms image

Categories     Garlic     Mushroom     Sauté     Low Carb     Low Cal     Low/No Sugar     Shrimp     Bell Pepper     Spring     Bon Appétit

Yield Serves 10

Number Of Ingredients 7

3 large red bell peppers
12 tablespoons olive oil
12 ounces oyster mushrooms
6 large garlic cloves, chopped
1 tablespoon finely chopped red jalapeño chili
1 1/4 pounds uncooked medium shrimp, peeled, deveined
2 tablespoons chopped fresh parsley

Steps:

  • Char peppers over gas flame or in broiler until blackened on all sides. Transfer to paper bag and let stand 10 minutes to steam. Peel, seed and quarter peppers. Arrange peppers on platter.
  • Heat 6 tablespoons oil in heavy large skillet over medium heat. Add mushrooms and sauté until tender, about 8 minutes. Season with salt and pepper. Arrange on platter with bell peppers. (Can be prepared 6 hours ahead. Cover and let stand at room temperature.)
  • Heat remaining oil in same skillet over medium-high hat. Add garlic and chile and sauté 2 minutes. Add shrimp and sauteé until cooked through, about 3 minutes. Mix in parsley. Spoon shrimp over mushrooms and peppers.

Tips:

  • Choose the right shrimp: Opt for large, fresh shrimp with a firm texture and a slightly briny smell. Avoid shrimp that is discolored or has a slimy texture.
  • Clean the shrimp properly: Remove the heads, shells, and tails from the shrimp. Devein the shrimp by making a shallow incision along the back and removing the dark vein.
  • Marinate the shrimp: Marinating the shrimp in a mixture of olive oil, garlic, lemon juice, and herbs before cooking helps to infuse flavor and prevent them from becoming dry.
  • Cook the shrimp quickly: Shrimp cooks very quickly, so be careful not to overcook it. Overcooked shrimp will become tough and rubbery.
  • Pair shrimp with complementary ingredients: Shrimp pairs well with a variety of ingredients, including vegetables, grains, and sauces. Some popular choices include mushrooms, asparagus, broccoli, rice, pasta, and lemon butter sauce.

Conclusion:

Shrimp with mushrooms is a delicious and versatile dish that can be enjoyed in many different ways. With its tender texture, delicate flavor, and endless pairing possibilities, shrimp is a popular choice for home cooks and restaurant chefs alike.
