Chocolate bundt cake, stuffed with Oreo sandwich cookies, topped with chocolate ganache, and cookies 'n cream pudding frosting!

1 box chocolate cake mix
1 box instant Oreo Cookies 'n Cream pudding mix
4 eggs
1 c. sour cream (reduced-fat is fine)
1/4 c. vegetable oil
about 20 Oreo cookies (divided; 8 whole, and the remainder coarsely chopped)
1 c. milk or semi-sweet chocolate chips
1/4 c. heavy cream
3 tbsp. butter
1 box instant Oreo Cookies 'n Cream pudding mix
3/4 c. cold milk
1 - 8 oz. container whipped topping (thawed)

Steps:

  • In a large bowl, stir together cake mix, pudding mix, eggs, sour cream, oil, and 1/2 of the coarsely chopped Oreos (eyeball it).
  • Spray a large tube pan or bundt pan with non-stick spray.
  • Spread half the batter evenly into prepared pan.
  • Arrange the 8 whole Oreos around the batter.
  • Spread with remaining batter.
  • Bake at 350 degrees for 40-45 minutes, or until a toothpick inserted near the center comes out clean.
  • Remove pan to a wire rack to cool for 10 minutes, then invert the cake onto the wire rack to cool completely. Do not cool it completely in pan - it will stick and become difficult to remove!
  • In a small microwave-safe bowl, combine chocolate chips, heavy cream, and butter.
  • Microwave on high at 30-second intervals until chocolate is melted and the mixture is smooth.
  • Drizzle over bundt cake.
  • Allow 10-15 minutes for ganache to set.
  • In a medium bowl, whisk together pudding mix and cold milk.
  • Fold in whipped topping.
  • Spread or pipe over the cake.
  • Sprinkle with remaining Oreo cookie pieces. Cut and serve.

2 3/4 c cake flour
2 1/2 tsp baking powder
1/4 tsp salt
1 c unsalted butter
2 c sugar
4 large egg
1 c milk
1 box vanilla pudding
12 oreos [crushed]
FROSTING
1 stick butter
2 c powdered sugar
1/2 tsp vanilla
1-2 Tbsp milk
6 or remaining oreos

Steps:

  • 1. 1. Preheat oven to 350 degrees F. Spray bundt pan with Pam Spray with flour. 2. In a small bowl, combine the flour, baking powder and salt. 3. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Add half the flour mixture and half the milk and mix. Add in remaining flour mixture and milk and mix until batter is smooth. Mix in crushed oreos. 4. Bake for approximately 55 minutes until toothpick inserted comes out clean. 5. Allow cake to cool.
  • 2. FROSTING: Beat butter until fluffy, add the remaining ingredients. Add either a little more milk to achieve the desired frosting consistency.
  • 3. SIDE NOTES: Even though it didnt call for it, I added 1/2 cup of water to the cake mix to thin out the mixture. it's up to you. Slightly crush Oreos to the preferance you like. then sprinkle Oreos on top of frosted cake

OREO CHOCOLATE CAKE

A rich, moist chocolate sponge with oreo buttercream filling, topped with cookie crumble. Great for birthdays!

250g self raising flour
250g light brown soft sugar
50g cocoa
250g dark chocolate
250g butter
4 eggs
154g pack of Oreo cookies
250g butter
3-400g sifted icing sugar
few drops vanilla extract
1-2 tablespoons milk

Steps:

  • Preheat your oven to 160C/fan 140C/gas 3. Grease and line 2x20cm sandwich tins.
  • Mix the flour, sugar and cocoa together. Melt the chocolate and butter and 200 ml water together over a low heat, then beat this along with the eggs into the dry ingredients.
  • Pour into the two sandwich tins, and bake for approximately 40 mins, until well risen, and a skewer inserted in the middle comes out clean. Transfer to wire racks and allow to cool.
  • While the cake is cooling, make the buttercream. Beat the butter until creamy, then add 300g of the icing sugar and vanilla. Mix well. An electric mixer is really useful here! You may find the mixture a bit dry - if so, add a tablespoon of milk at a time. If the mixture is too wet, add a little more icing sugar.
  • Blitz all but one of the cookies in a food processor. Mix half of the cookie crumbs into the buttercream, and reserve the other half.
  • Spread the butter icing between the two cakes, and over the top of them when sandwiched together.
  • Sprinkle the remaining cookie crumbs over the top. You could add mini oreos to decorate of you like!
  • Eat the reserved cookie with a glass of milk, to reward yourself for all your hard work!
