2 tablespoons chili oil, plus more for garnish
1 tablespoon chili bean paste
1 tablespoon rice vinegar
1 tablespoon vegetable oil
1 tablespoon Sichuan peppercorns
1 large clove garlic, coarsely chopped
3 inner celery stalks, with leaves, sliced diagonally 1/4-inch thick
One 8-ounce package firm tofu gan (dried firm beancurd), sliced into 1/8-inch-thick slices
1 teaspoon light soy sauce
Sea salt and freshly ground black pepper
Juice of 1/2 lemon
1/4 cup coarsely chopped fresh cilantro leaves
1/4 cup roasted salted peanuts

Steps:

  • Whisk together the chili oil, chili bean paste and rice vinegar in a small bowl.
  • Heat a wok over high heat until smoking and pour in the vegetable oil. Add the peppercorns and garlic and toss briefly, and then add the celery and stir-fry until softened, 1 minute. 7 oz. (200 g) baked tofu (, sliced to 1/2" (1 cm) thick 2" (4 cm) long sticks)
3 to 4 stalks regular celery (or 1 small batch Chinese celery)
3 tablespoons light soy sauce ((or soy sauce))
1 tablespoons Chinkiang vinegar ((or 1 1/2 tablespoons rice vinegar))
3 teaspoons sugar
1 tablespoon peanut oil
2 cloves garlic (, grated)
2 teaspoons grated ginger
1/2 teaspoon ground Sichuan peppercorns ((or ground black pepper))
2 tablespoons homemade chili oil (, or to taste (or 2 teaspoons toasted sesame oil))

Steps:

1 cup peanut oil
1 (2-inch long) piece fresh ginger, cut into 3 or 4 slices
1 (3-inch long) piece cinnamon
3 cloves
1 teaspoon coriander seeds
1 teaspoon cumin seeds
4 star anise
1 tablespoon Sichuan peppercorns
1/4 cup red chili flakes
Salt
1 bunch Chinese celery, thinly sliced
4 to 6 ounces pressed tofu, thinly sliced or julienned

Steps:

  • Heat oil in a small saucepan over medium-high heat; when it simmers, add ginger, cinnamon, cloves, coriander, cumin, star anise, Sichuan peppercorns, and chili flakes. Remove from heat and let sit until cool, at least 1 hour and preferably 2 or 3. Strain oil into a bowl or jar and discard spices.

2 tablespoons vegetable oil
3/4 teaspoon Asian sesame oil
2 teaspoons rice vinegar (not seasoned)
