SIMPLE FRUIT JUICE GRANITA
This is a very simple treat that can be used with your favorite fruit juices to make many different variations. My favorite variation has banana in it. It brings a bit of creaminess to the icy treat. The small bottles of prepackaged juice in the produce section are the perfect amount of juice for this recipe--just pick a flavor! Don't let the mixture freeze completely before you scrape. The secret is to scrape as it freezes.

Steps:
- Combine all ingredients in a deep-sided metal pan, and place in freezer, uncovered, until it is nearly set, at least 4 hours, whisking mixture every hour.
- Remove mixture from freezer, and scrape surface with the tines of a fork until it is the texture of shaved ice. (Mixture can be frozen overnight without whisking; remove from freezer in the morning, and let sit at room temperature about 10 minutes to allow it to slightly soften before scraping with a fork.) Serve.
ORANGE GRANITA
Steps:
- Clean and wash the oranges. Cut off the top 1/4 of the oranges and shave a small slice off the bottom so it stands easily.
- Using a grapefruit knife, cut out the flesh of the oranges and place in a strainer set over a bowl. Be careful not to cut through the bottom. Stand the oranges on a cookie sheet and place in the freezer and freeze until solid.
- Press the flesh of the oranges through the strainer to extract all of the juice. You should end up with about 1 1/2 to 1 3/4 cups of orange juice. Add the extra 4 cups orange juice. Stir in sugar, a tablespoon at a time, until the mixture is of desired sweetness. Add the basil and orange-flavored liqueur and let sit for 15 minutes.
- Strain the mixture into a roasting pan or baking dish. The dish should be large enough so the liquid is not more than 1-inch deep. Freeze the mixture for 1 hour. Remove from the freezer and scrape with 2 forks to break up ice. Return to the freezer and freeze until solid, about 2 to 3 hours, scraping with forks every hour or so.
- When the granite is frozen, scoop it into the orange shells and serve immediately.
CLEMENTINE GRANITA
Keep extra clementines on hand in case some of the skins tear and for juicing. If you don't feel like juicing enough clementines to yield 2 cups, use store-bought orange juice to make up the difference.

Steps:
- Slice the top 1/2 inch off each clementine; reserve. Cut around flesh and scoop out into a sieve set over a bowl; reserve skins and be careful not to tear them. Press flesh to extract juice. Squeeze in juice from tops. (You'll have about 1 cup.) Juice more clementines to yield 2 cups.
- Moisten clementine skins with some juice or water. Roll skins in 1/4 cup sugar to coat. Freeze until solid, about 2 hours.
- Bring remaining 1/4 cup sugar, 1/4 cup water, and ginger to a boil in a saucepan, stirring, until sugar dissolves. Remove from heat. Let stand for 30 minutes; discard ginger. Stir in 2 cups juice and the lemon juice; transfer to a nonreactive 8-inch square baking dish. Freeze until solid, about 3 hours.
- Scrape granita with a fork to fluff. Spoon granita into clementine "cups." Freeze for 10 minutes before serving.
EASY LIME GRANITA (2 WAYS)
Steps:
- In a small pot on medium high heat combine the sugar and water, bring to a boil, then lower heat and simmer for 5 minutes. Let cool completely.
- When the syrup has cooled had the strained lime juice and zest, whisk to combine. Pour into a freezer safe bowl. Place in the freezer for approximately 1 hour (may be more or less time depending on your freezer).
- Remove bowl from the freezer and with a fork break up the ice and mix to combine. Repeat 3-4 times or until the mixture is slushy. Serve in a tall glass with a spoon.
- Follow the same steps for the freezer method, but instead of pouring into a bowl pour into the ice cream maker and churn according to manufacturer's directions, 25-30 minutes or until mixture becomes compact and creamy. Enjoy!

Tips:
- Choose ripe and flavorful fruits: Overripe fruits are ideal for granita as they are sweeter and have a more intense flavor.
- Use a variety of fruits: Experiment with different combinations of fruits to create unique and delicious granitas.
- Adjust the sweetness level: If your fruits are not very sweet, you can add a little sugar or honey to the mixture. You can also add a splash of citrus juice to balance the sweetness.
- Chill the mixture thoroughly: Before freezing, make sure the fruit mixture is completely chilled. This will help the granita freeze evenly and prevent it from becoming icy.
- Freeze the granita in a shallow container: This will allow the granita to freeze quickly and evenly.
- Scrape the granita every 30 minutes: This will help to break up the ice crystals and create a smooth and slushy texture.
- Serve the granita immediately: Granita is best enjoyed fresh. If you need to store it, freeze it for up to 2 weeks. When ready to serve, thaw the granita in the refrigerator for a few hours or overnight.
Conclusion:
Fruit juice granita is a refreshing and delicious treat that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a little creativity, you can create endless variations of granita using different fruits, flavors, and toppings. So next time you are looking for a cool and refreshing treat, give fruit juice granita a try. You won't be disappointed!
