  • Heat the grill to medium for direct grilling. Slice the mangoes in 2 pieces from the pit. Score the flesh of the mangoes in a diamond pattern, taking care not to cut into the skin. Pop the flesh by holding the skin side and pushing up. Brush the flesh with the oil and grill, cut-side down, until slightly charred, about 1 minute.
  • Transfer the mangoes to a platter and immediately drizzle with the lime juice and sprinkle with the salt, chile powder and lime zest. Garnish with cilantro leaves if desired.

1 large ripe but firm mango
1 teaspoon extra virgin olive oil or grapeseed oil
2 small Roma tomatoes (5 to 6 ounces) cut in small dice (about 2/3 cup diced tomato)
1/2 small jicama (about 4 ounces), peeled and finely chopped (about 2/3 cup)
2 tablespoons fresh lime juice
Salt to taste
1/4 cup chopped cilantro
1 or 2 serrano or jalapeño peppers, finely chopped

Steps:

  • Prepare a medium-hot grill. Cut mango down flat sides of the seed to get 2 large flat pieces. Brush exposed surface lightly with oil and place on grill. Grill for about 6 minutes, until light grill marks appear. Remove from heat. With the tip of a paring nife, cut thin slices down to the skin but not through it, then cut a herringbone pattern across the slices. Push on the skin side so the cut mango pops out, then cut away the dice from the skin. Cut dice smaller if they are larger than 1/2 inch. Transfer to a medium bowl.
  • Add remaining ingredients to bowl and toss together. Allow to sit for 15 to 30 minutes so flavors will ripen.

1/3 cup organic sugar (aka evaporate cane juice, any natural sugar should work)
2/3 cup water
2 inches gingerroot, sliced thin
3 ripe mangoes, peeled pitted and sliced
3 tablespoons Earth Balance margarine

Steps:

  • Combine sugar, water and ginger in a small saucepan and heat until the sugar is dissolved.
  • Remove from the heat and let cool; when the syrup is completely cooled, remove and discard the ginger. While that cools you can cut up your mangos and melt the margarine/butter.
  • Brush the mango slices with melted margarine/butter and grill until slightly charred (2-3 mnutes), turning once.
  • Place the mangos in a bowl, add the syrup, cover and let cool.
  • When ready to serve, cut the mango into bite-sized chunks or whatever size you need.

Steps:

  • Standing mango upright, cut two lengthwise slices, each about 1/2 inch thick, from a broad side of mango pit. Cut remaining broad side and remaining mangoes in same manner. (There should be a total of 12 slices, 6 of them end pieces.) Discard pits and reserve any remaining mango for another use.
  • Prepare grill.
  • Working with end pieces only, score flesh in a cross-hatch pattern, being careful not to cut through skin, and grill, cut side down, on a well-oiled rack set 5 to 6 inches over glowing coals until golden brown, about 2 minutes. (Alternatively, mango may be grilled in a hot well-seasoned ridged grill pan over moderately high heat in same manner.) Transfer mango as grilled to a platter. When end pieces of mango are cool enough to handle, push from skin side to turn inside out. Grill remaining mango slices about 2 minutes on each side.

1 1 1 cup of cinnamon sugar
1 1 1 cup of honey
1 1 1 scoop of vanilla bean ice cream (optional)

Steps:

  • Turn grill on medium high. Place a sheet of tin foil ontop of the grill and spray with non-stick spray. Peel the skin off of each mango. Cut into the middle and take out the seed. Carefully slice the mangoes into thin slices. Drizzle half a cup of honey with a spoon and sprinkle half a cup of cinnamon sugar, also with a spoon, on to one side of the mangoes. (NOTE: Drizzle the honey first so the cinnamon sugar will stick to the honey). Do not prepare the other sides. Carefully and quickly place the prepared mango sides on the tin foil so the cinnamon sugar and the honey will not slip off. Grill the side of the mango for about five minutes. While waiting for one side of the mangoes to grill, prepare the other sides with the other half of the honey and cinnamon sugar. When the first side of mangoes are done grilling, flip them. Grill that side for five minutes as well. Flip the mango once more and grill each side for another five minutes Carefully take the slices off the grill. Place however many slices you desire on to a plate and scoop vanilla bean ice cream on to the mango slices.
