EASY VEGETABLE-HERB RICE

Easy Vegetable-Herb Rice image

A nice departure from the rice-a-roni routine. Don't you just get tired of those same old flavors they have?

Provided by PalatablePastime

Categories     Rice

Time 35m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 cup thinly sliced carrot
2 cups basmati rice (or other fine quality rice)
1/2 teaspoon dill weed
2 tablespoons chopped fresh parsley
1 cup chopped onion
3 cups water
2 teaspoons salt
1 dash black pepper
non-stick olive oil flavored cooking spray (or 1 tsp. olive oil, spread in pan with paper towel)
1 tablespoon fat-free margarine (or vegan margarine) (optional)

Steps:

  • Spray large saucepan with cooking spray.
  • Add onion and carrots and saute over medium heat, adding a few drops of water if necessary to prevent sticking, stirring frequently, until onion is translucent and carrot is fairly tender.
  • Add water rice, salt, dill weed, and pepper; bring to a boil.
  • Cover; simmer 20-25 minutes or until rice is tender.
  • Stir in parsley and fat-free margarine.
  • Serve.

Tips:

  • Use fresh herbs: Fresh herbs add the most flavor to herb rice. If you don't have fresh herbs on hand, you can use dried herbs, but use only about half the amount called for in the recipe.
  • Choose the right type of rice: Long-grain rice is the best type of rice to use for herb rice. It cooks up light and fluffy, and it holds its shape well.
  • Cook the rice properly: Be sure to cook the rice according to the package directions. If you overcook the rice, it will become mushy and lose its flavor.
  • Add the herbs at the end of cooking: This will help to preserve their flavor and prevent them from becoming bitter.
  • Use a variety of herbs: Don't be afraid to experiment with different types of herbs to create your own unique herb rice blend. Some popular herbs to use include parsley, cilantro, basil, thyme, and rosemary.

Conclusion:

Herb rice is a versatile dish that can be served as a side dish or as a main course. It is a great way to use up fresh herbs, and it is a delicious and healthy addition to any meal. So next time you are looking for a simple and flavorful side dish, give herb rice a try. You won't be disappointed!
