12 garlic cloves, peeled
2 pounds potatoes, cut into 1/4- to 1/2-inch cubes (about 7 cups)

  • In a large cast-iron or other heavy skillet, heat oil over medium-low heat. Add garlic cloves; cook, uncovered, until almost tender, 10 minutes, stirring occasionally., Increase heat to medium. 1 1/4 lb pork tenderloin, trimmed of fat
4 tablespoons butter, melted
3/4 teaspoon salt

3 pounds small boiling potatoes (white, red, or fingerling)
2 red bell peppers
3 1/2 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
