1-1/2 pounds boneless skinless chicken breast halves
Salt and pepper to taste
1 teaspoon lemon-pepper seasoning
1/4 cup butter, cubed
2 tablespoons minced green onions
1 cup heavy whipping cream
2 tablespoons lemon juice
1 teaspoon dried tarragon
Hot cooked rice

Steps:

  • Pound chicken to 1/4-in. thickness; cut each half into three pieces. Season with salt, pepper and lemon-pepper. In a large skillet, saute a third of the chicken at a time in butter until browned and no longer pink. Remove and keep warm. , In the same skillet, saute onions until tender. 4 chicken breasts (pounded thin)
4 tablespoons dijon mustard
salt and pepper (to taste)
2 tablespoons olive oil (divided)
1 pound mushrooms (sliced)
4 shallots (diced)
3 cloves garlic (minced)
2 cups heavy cream or half-and-half
1/4 cup fresh tarragon (chopped)

Steps:

  • Brush both sides of chicken breasts with dijon mustard. Season generously with salt and pepper.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook the chicken breasts until they reach an internal temperature of 165 degrees, flipping half way through. This should take about 6 to 8 minutes if using thin chicken breasts.
  • Remove the cooked chicken from the skillet and set aside.
  • Using the same skillet, pour in the remaining 1 tablespoon olive oil. Add in mushrooms and shallots. Saute for 3 to 5 minutes. Add in garlic and cook 1 minute more.
  • Pour in heavy cream and tarragon. Bring to a simmer and cook until the sauce has thickened, about 5 minutes.

6 boneless skinless chicken breasts (can use bone in but adjust time) or 6 boneless skinless chicken thighs (can use bone in but adjust time)
salt, to taste
pepper, to taste
1/4 cup all-purpose flour
1/4 cup butter
1 tablespoon onion, finely chopped
1/4 cup dry white wine
1/2 teaspoon dried tarragon
3/4 cup chicken broth
1/4 cup heavy cream

Steps:

  • Sprinkle chicken with salt and pepper and dredge in flour. Set aside remaining flour.
  • Heat 3 tablespoons of butter over medium heat in large skillet and brown chicken on both sides. Remove chicken and keep warm.
  • Saute onion in same skillet until it begins to become clear.
  • Add wine and cook until liquid is almost evaporated, stirring to loosen browned bits (deglaze) on bottom of skillet. Watch closely- this happens fast!
  • Reduce heat to medium-low and stir in reserved flour until it becomes a thick paste.
  • Add tarragon, chicken broth and the cooked chicken. Cover and cook until tender.
  • Place chicken on a warm platter.
  • Add remaining butter and heavy cream to the liquid that is in the skillet and heat through.
  • Pour sauce over the chicken and garnish with a little more tarragon or some chopped fresh parsley or green onion if desired.

1 pound boneless (skinless chicken breasts, sliced and pounded into even pieces)
1 tablespoon canola oil
1 tablespoon butter
1 small onion (diced)
4 ounces baby bella mushrooms (sliced)
1 clove garlic (minced)
2 tablespoons flour
2 tablespoons tomato paste
3 cups Progresso Unsalted Chicken Cooking Stock
1 teaspoon kosher salt
1 teaspoon dried tarragon
8 ounces Pappardelle pasta noodles (broken into pieces)
3/4 cup whole milk (full fat Greek yogurt)

Steps:

  • Pat the chicken breast pieces dry, and sprinkle them with salt and pepper.
  • Heat the oil and butter in a large sauté pan over medium high heat.
  • Saute the chicken breasts until golden on each side (about 2 minutes per side)
  • Remove the chicken from the pan, and place on a plate, and set aside.
  • Add the onions, mushrooms and garlic to the saute pan, and let cook for about 2 more minutes until softened.
  • Add the flour, and stir for about 30 seconds. Add the tomato paste, and stir again to combine.
  • Slowly pour in the Progresso Cooking Stock, salt, and tarragon, and stir well. Bring the stock to a boil, and then add the dried pasta. Mix to submerge the pasta, and lay the chicken breasts on top of the pasta.
  • Reduce the heat to low, cover, and let simmer for about 8-10 minutes or until the chicken is cooked through, and the pasta is al dente.
  • Remove the pan from the heat.
  • Place the Greek yogurt in a bowl or measuring cup, temper the yogurt by slowly adding a soup ladle full of the pan sauce to the yogurt, while stirring to combine.
  • Add the warmed yogurt into the sauce, and stir well to combine the chicken and noodles with the sauce.
  • Serve immediately.

1 teaspoon sweet paprika
1 teaspoon Madras curry powder
6 large (about 6 ounces each) or 12 small (about 3 ounces each) boneless, skinless chicken breasts
Kosher salt
Canola oil
3 tablespoons unsalted butter
1 tablespoon minced shallot
1/4 cup dry white wine
1 cup chicken stock
1 tablespoon coarsely chopped tarragon plus 1 tablespoon whole tarragon leaves
Freshly ground black pepper

Steps:

  • In a small bowl mix together paprika and curry powder, and sprinkle on both sides of chicken breasts; cover and refrigerate for 2 hours.
  • Place 2 breasts on large sheet of plastic wrap, cover with more plastic and pound with a mallet until they are about 1/4-inch thick. Repeat with remaining breasts. (Chicken may be wrapped and refrigerated for up to 12 hours.)
  • Preheat oven to 200 degrees. Season chicken on both sides with salt. In a large skillet over medium-high heat, add enough canola oil to film the bottom of pan. Working in batches, without crowding, place breasts smooth side down and let cook until golden brown, 1 to 1 1/2 minutes. Turn and cook for another 1 to 1 1/2 minutes. Transfer to a baking sheet and keep warm in oven.
  • Wipe out skillet and return to medium heat. Add 1 tablespoon of butter and shallot, and sauté for 30 seconds, swirling pan to coat shallot with butter. Add wine, raise heat to medium-high, and cook until wine is reduced by half, about 1 minute. Add stock, bring to boil, and cook until reduced and slightly thickened, 1 to 2 minutes.
  • Stir in chopped tarragon, remaining 2 tablespoons butter, and any juices that have accumulated on baking sheet. Swirl to melt butter, and season to taste with salt and pepper. Arrange chicken on a warmed platter, pour sauce over it, and garnish with whole tarragon leaves.

1 tablespoon olive oil
1 (about 3 pound/1.4 kg) chicken, cut into 8 pieces
Salt and freshly ground black pepper
1/2 cup chicken stock
1 shallot, minced
3/4 cup dry white wine
1 cup creme fraiche
1/2 cup chopped fresh tarragon
Lemon juice, to taste
