1 envelope sugar free instant cocoa mix
¼ cup hot water
¼ cup soy milk
2 tablespoons sugar free chocolate syrup

Steps:

  • Place cold brew concentrate in ice cube tray(s); place in freezer until frozen solid, 2 to 4 hours.
  • Dissolve hot cocoa mix in hot water.

The consistency of this dreamy, "no-bake" dessert is quite unusual. It's a thick, slightly gooey, frozen treat. It's not quite solid like ice cream, yet substantially heavier than whipped cream. I've made it skinnier by using reduced-fat Oreo cookie crumbs for both the crust and topping. The velvety filling is made with all reduced-fat and fat-free ingredients. One slice contains 278 calories and 7 grams of fat. It's pure mocha bliss!!!

20 reduced-fat Oreo Cookies
1 (8 oz.) package reduced-fat cream cheese
1 (14 oz.) can fat-free sweetened condensed milk
⅔ cup Hershey's Simply 5 Syrup, (see shopping tips)
1½ tablespoons instant coffee, (dissolved in 1 tablespoon hot water)
1 teaspoon vanilla extract
1 cup frozen Cool Whip-Free ((fat-free non-dairy topping), thawed)

Steps:

  • Coat a 9-inch spring-form pan with cooking spray. Set aside.
  • To make crust: Break the Oreo cookies into pieces and place in a blender. Blend into crumbs. In a small bowl, mix cookie crumbs and butter. Set aside ¾ cup of the crumb mixture for later use as the topping. Press remaining mixture into bottom of the spring-form pan. Place in freezer for at least 15 minutes to chill.
  • To make filling: In a large bowl using an electric mixer, beat cream cheese until smooth. Add sweetened condensed milk, chocolate syrup, dissolved coffee, and vanilla extract. Beat until smooth. Gently fold in Cool Whip by hand.
  • Spoon filling into chilled crust. Sprinkle reserved crumb mixture evenly over the top. Freeze for at least 6 hours (uncovered) until firm. Store leftovers covered in the freezer.

2 -3 tablespoons hershey cocoa powder
1 quart half-and-half

1 cup whole milk, or more to taste
1/2 cup semisweet chocolate chips, plus more for topping if desired!
1/4 cup sweetened condensed milk
1/4 cup chocolate syrup, plus more for drizzling
1 teaspoon vanilla extract
1/4 cup half-and-half, optional
Whipped cream, for serving
1 pound ground coffee (a good, rich roast)

Steps:

  • Add the coffee, milk, chocolate chips, sweetened condensed milk, chocolate syrup and vanilla to a blender. Top off the blender with ice and blend until smooth and icy, with tiny chocolate bits throughout. (Add some half-and-half if you'd like it to be a little richer and creamier.)
