1/3 cup cold brewed espresso or strong coffee
2 tablespoons coffee-flavored liqueur, cold brewed espresso or strong coffee
1 package (3 oz) soft ladyfingers, cut into 1/2-inch cubes
1 oz semisweet baking chocolate, grated (1/4 cup)

Steps:

  • In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in ricotta cheese, powdered sugar and vanilla until creamy. Beat in yogurt until well blended. In small bowl, mix espresso and liqueur.
  • In 8 small parfait glasses or clear drinking glasses, layer half of the ladyfingers, half of the espresso mixture and half of the cheese mixture. Sprinkle each with about 3/4 teaspoon grated chocolate. Repeat layers.

24 lady fingers, crushed (use the harder biscuit lady fingers instead of the sponge cake lady fingers)
1/4 cup milk
1 1/2 cups coffee
3 tablespoons Kahlua (or any coffee liqueur), divided
2 eggs, separated
5 tablespoons sugar, divided
9 ounces Mascarpone cheese
3 tablespoons Frangelico (or any hazelnut liqueur)
Cocoa powder, to serve

Steps:

  • Mix together milk, coffee, 2 tablespoons Kahlua and 4 tablespoons of sugar in a bowl. Add the crushed ladyfingers to soak.
  • Beat together egg yolks and remaining tablespoon of sugar. Add the mascarpone cheese, remaining Kahlua and Frangelico.
  • With a hand or stand mixer, whip egg whites until stiff peaks form, then gently fold into the mascarpone mixture.
  • Spoon half of the soaked ladyfingers between small glasses (mine were about 5 ounces each), then top with a layer of the mascarpone mixture. Add a second layer of the soaked lady fingers and top with more mascarpone mixture Smooth tops. Cover each with a dusting of cocoa powder. Refrigerate for at least 3 hours before serving.

4 1/2 teaspoons instant espresso powder
1/2 cup boiling water
3 tablespoons rum
2 cups cold 1% milk
2 packages (1 ounce each) sugar-free instant vanilla pudding mix
4 ounces Neufchatel cheese (at room temperature)
1/3 cup low-fat ricotta cheese
1 teaspoon almond extract
1 package ladyfingers ((approximately 12))
2 cups fat-free whipped topping
2 tablespoons mini chocolate chips
cocoa powder (optional) (for garnish)

Steps:

  • -In a small bowl, dissolve the espresso powder in boiling water. And rum. Stir and set aside to cool.
  • -In a large bowl, whisk together the pudding mixes and the milk until thickened.
  • -With a hand mixer (or using a stand mixer) in a large bowl, whip the Neufchatel cheese and ricotta until smooth and creamy.
  • -Add the whipped cheese mixture into the pudding mixture and stir well to combine.
  • -Using a pastry brush, generously brush the espresso/rum mixture onto each ladyfinger (you may also wish to dip the ladyfingers quickly into the espresso/rum mixture).
  • -Gently break each soaked ladyfinger into smaller pieces to fit inside the parfait glasses.
  • -Using six parfait glasses, place a layer of soaked ladyfinger pieces in the bottom of each glass.
  • -Spoon the pudding/cheese mixture into a large zip-type plastic bag. Gently squeeze the mixture into the bottom corner of the bag. (You can also use a pastry bag), Snip the corner with a scissor.
  • -Without using too much pressure, top the ladyfingers layer with the pudding/cheese mixture.
  • -Using the same technique (with the whipped topping and the zip-type bag), pipe the whipped topping over the pudding/cheese layer.
  • -Continue with the additional layers of soaked ladyfingers, pudding/cheese, and the whipped topping to finish.
  • -Sprinkle each parfait with a light dusting of cocoa powder, and a small sprinkle of mini chocolate chips.

1 1/2 cups water
1/4 cup sweet Marsala

6 Italian lady fingers
3 tablespoons cocoa powder

Steps:

  • To make the tiramisu filling: In the bowl of a tabletop mixer, with whip attachment, beat cream and sugar until fluffy and soft peaks form. Reserve 1 cup and refrigerate to use later as garnish. Add cheese to remaining cream on low speed, gradually increasing to high speed for 30 seconds or until thoroughly incorporated. Whisk yolk in bowl over pot of simmering water until warm and pale yellow in color. Add the Marsala and vanilla. Cover and refrigerate until ready to assemble.
  • To make the coffee syrup: In a medium sauce pot combine all ingredients except Marsala and vanilla. Reduce syrup to 1 cup. Let cool. Add Marsala and vanilla, to taste.
  • To assemble: Break the ladyfingers in half and dip into coffee syrup. Count 5 seconds and remove from liquid to drain on baking tray. Repeat until all cookies have been dipped. Place 2 pieces of soaked ladyfingers into sides of 2-ounce Sherry glasses. Drizzle 1 tablespoon of syrup over ladyfingers and let absorb. Spoon tiramisu cream filling into each glass. Sprinkle tops with cocoa powder. Garnish with dollops of whipped cream and chocolate shavings. Serve immediately.

*Italian cream cheese available at Italian markets and many supermarkets. If unavailable, blend 3/4 pound cream cheese with 6 tablespoons whipping cream and 1/4 cup sour cream.
