2 shallots, finely chopped (about 3 tablespoons)
3/4 cup good-quality dry white wine
18 fresh sea scallops, tough muscles removed
6 scallop shells (each about 4 1/2 inches)
1/2 teaspoon coarse salt
1/2 teaspoon white peppercorns, crushed with the flat side of a chef's knife or the bottom of a skillet
1 lemon, peeled and cut into wedges

Steps:

  • Preheat broiler. Melt 3 tablespoons butter in a medium saucepan over medium heat. Stir in shallots, and cook 20 seconds. Add wine, and simmer until it has been reduced to 1/2 cup, about 10 minutes. Add scallops; cover, and cook 1 minute. Using a slotted spoon, transfer scallops to a cutting board. Pour poaching liquid though a sieve into a bowl.
  • Cut each scallop crosswise into 2 or 3 slices, cutting almost but not completely through. Fan open, and divide among shells. Transfer to a rimmed baking sheet, and spoon 1 tablespoon poaching liquid over each shell. Sprinkle with salt, and dot with remaining tablespoon butter. Broil until just bubbling, 1 to 2 minutes. Sprinkle with peppercorns, and serve with lemon wedges.

8 ounces bay scallops
2 tablespoons unsalted butter
1 tablespoon minced garlic
1/4 teaspoon kosher salt, plus a pinch
1 cup fresh bread crumbs or crushed crackers
2 medium size very ripe tomatoes, finely chopped
1/4 cup chopped fresh parsley leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Remove the side muscles from the scallops and rinse with cold water and thoroughly pat dry.
  • Melt the butter in a medium saute pan over medium heat. Once the butter is melted add the garlic and a pinch of salt and cook for 30 seconds. Remove the pan from the heat and toss in the bread crumbs until well combined. Set aside.

2 medium shallots, finely minced
1 1/2 cups dry white wine
1/2 cup white-wine or Champagne vinegar
1 cup (2 sticks) cold unsalted butter, cut into tablespoons
Coarse salt and freshly ground pepper

Steps:

  • In small saucepan, combine shallots, wine, and vinegar. Bring to a boil, reduce heat to medium, and simmer until liquid is reduced to 2 tablespoons, about 10 minutes.

Salmon Roe
Micro-greens

45 ml of White Wine Vinegar
90 ml of Chardonnay
A Pinch of Salt and White Pepper (to taste)
180 g of Cold Butter (cut into cubes)

Steps:

  • 1. Gently rinse the scallops and pat them dry with paper towels. 2. Add chardonnay, white wine vinegar and shallots in a saucepan. Bring to a simmer and cook till about 1 tbsp of liquid remains. In a low heat, rapidly whisk in cold butter, 1 to 2 pieces at a time. 3. When all of the butter has been incorporated, season with salt and white pepper. The sauce should be light and creamy. Strain out the shallots and set it aside. 4. Heat olive oil in a frying pan. Season the scallops with salt and place them in the pan when it is really hot. Depending on the thickness of the scallops, fry for about 1 to 1 1/2 minutes until golden at the edges on each side. 5. Spoon Beurre Blanc sauce onto warm plates, followed by the scallops. 1/4 cup (packed) soft dried tomatoes, not packed in oil (1 1/4 ounces)
1 1/2 sticks (3/4 cup) unsalted butter, softened
1/8 teaspoon salt
1/3 cup minced shallots
2/3 cup dry white wine
3 tablespoons water
1 teaspoon fresh lemon juice
FOR SCALLOPS
2 pounds large sea scallops (30), tough muscle removed from side of each if necessary
About 2 tablespoons vegetable oil

  • MAKE TOMATO BEURRE BLANC
  • Soak the tomatoes in warm water until softened, 20 to 25 minutes. Drain and pat dry, then mince. Stir together the tomatoes, butter, and salt, then form into an 8-inch log on a sheet of plastic wrap and chill, wrapped in plastic wrap, until firm, about 1 hour. Cut tomato butter into 12 equal pieces.

1/2 cup crisp acidic white wine
1/2 cup fish stock
250 g sea greens
1 large parsnip, peel and rough chopped
2 bay leaves
5 cups 2% milk
2 tablespoons honey
1 pinch kosher salt
1/2 lb unsalted butter (diced and cold)

Steps:

  • For the beurre blanc:.
  • In a medium sauce pot, simmer shallots, white wine vinegar and tarragon for 3-4 minutes.
  • Add white wine and fish stock, continue to reduce by half and strain.
