This skinny soup is a recipe my father came up with that's pretty much guiltless when you're dieting. Eat as much as you want!

8 cups vegetable broth
1 head cabbage, coarsely chopped
2 cups chopped celery
2 medium yellow onions, sliced lengthwise
1 cup diced mushrooms
1 cup fresh bean sprouts
3 green onions, sliced
2 jalapeno peppers, diced
1 dash Sriracha sauce, or to taste

Steps:

  • Combine vegetable broth, cabbage, celery, onions, and mushrooms in a large stockpot. Bring to a boil; reduce heat and simmer, covered, for 20 minutes.
  • Place 1/4 cup bean sprouts into 4 serving bowls. Divide green onions and jalapenos among the bowls. Ladle soup into each bowl and add Sriracha sauce. Serve immediately.

This is a good recipe for those of you who are looking for soups that are low in fat, but high in taste. The soup is great as is, but some diced sweet potato is a nice addition.

Number Of Ingredients 11

6 cubes chicken bouillon
2 carrots, chopped
1 (28 ounce) can stewed tomatoes, with juice
1 onion, chopped
1 stalk celery, chopped
1 cup chopped green bell pepper
2 cups shredded cabbage
1 ½ teaspoons dried basil or to taste
2 cloves garlic, minced
1 teaspoon Italian-style seasoning
6 cups water, or to cover

Steps:

  • In a large pot over high heat, combine the bouillon, carrots, tomatoes, onion, celery, green bell pepper, cabbage, basil, garlic, Italian-style seasoning and water. Bring to a boil, reduce heat to low and simmer for 30 to 45 minutes, or until all vegetables are to desired tenderness.
