SLOW COOKER CHICKEN CORDON BLEU
Aquired this through a recipe swap and love that it doesn't use canned soup like the others I've seen. Prep the chicken bundles the night before and you'll be out the door in no time in the morning.

Yield 6 chicken bundles, 4-6 serving(s)

Steps:
- Place chicken breasts between 2 sheets of plastic wrap. Flatten to ¼" thickness. Season with a pinch each salt, pepper, and garlic powder.
- Fold cheese so it is about ½" narrower than ham. Place cheese on ham and fold in each of the long sides and then roll from one short end, burrito-style. This will help prevent the cheese from running out during the cooking process. Place one ham roll on a narrow end of each piece chicken and roll into a bundle.
- Wrap a piece of bacon lengthwise around each chicken bundle and secure with a toothpick. Ensure the bacon tightly covers the ends of the bundle as it will also help prevent leaky cheese. Place the bundles into slow cooker.
- Combine ½ cup water, bouillon and wine. Pour over chicken. Cover and cook 5-6 hours on LOW.
- Just before serving, remove chicken from slow cooker. If needed, strain cooking liquid and return to slow cooker. Switch heat to HIGH. Combine cornstarch with remaining ½ cup water. Stir ½ cup of slow cooker liquid into the cornstarch mixture to temper and then add that back to slow cooker. Stir well until sauce thickens.
- Serve chicken and sauce over rice.

Tips:
- Use high-quality ingredients. The better the ingredients, the better the soup will taste. For the chicken, use boneless, skinless chicken breasts or thighs. For the ham, use a good-quality deli ham. And for the Swiss cheese, use a flavorful cheese that melts well, such as Gruyère or Emmental.
- Don't overcrowd the slow cooker. If you overcrowd the slow cooker, the soup will not cook evenly. Leave some space between the ingredients so that they can cook through properly.
- Cook the soup on low for 6-8 hours, or on high for 3-4 hours. The longer you cook the soup, the more flavorful it will be. However, be careful not to overcook the soup, or the chicken and ham will become tough.
- Season the soup to taste. Once the soup is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, garlic powder, or onion powder.
- Serve the soup with your favorite toppings. Some popular toppings for cordon bleu soup include shredded chicken, ham, Swiss cheese, croutons, and parsley.
Conclusion:
Cordon bleu soup is a delicious and easy-to-make soup that is perfect for a cold winter day. It is also a great way to use up leftover chicken and ham. With its creamy broth, tender chicken and ham, and melted Swiss cheese, this soup is sure to be a hit with your family and friends!
