Time 4h10m

Yield 6-8 serving(s)

Number Of Ingredients 6

1/2 cup brown sugar, firmly packed
1 1/2 tablespoons herbes de provence
1 1/2 teaspoons ground coriander
1 teaspoon salt
1/4-1/2 teaspoon pepper
1 1/2 lbs pork tenderloin

Steps:

  • Combine the brown sugar, herbes de Provence, coriander, salt and pepper in a small bowl.
  • Rub this mixture evenly onto the tenderloins and place into a slow cooker.
  • Set on low and cook for 4-6 hours or until internal temperature of 145 degrees F is reached.
  • Removed from slow cooker and let rest 10 minutes before slicing.
  • Also removed juices from slow cooker and let cool slightly, they will thicken up like a syrup.
  • Slice tenderloin and drizzle with thicken juices.

Tips:

  • Choose a well-trimmed pork tenderloin: Look for a tenderloin that is evenly shaped and free of excess fat. This will help ensure even cooking.
  • Don't overcrowd the slow cooker: Make sure there is enough space around the pork tenderloin so that it can cook evenly. If the slow cooker is too crowded, the pork may not cook through properly.
  • Use a low-sodium broth: This will help to prevent the pork from becoming too salty. If you only have regular broth on hand, you can reduce the amount of salt you add to the recipe.
  • Cook the pork tenderloin on low for 6-8 hours, or on high for 3-4 hours: The cooking time will depend on the size of the tenderloin and the temperature of your slow cooker. Use a meat thermometer to check that the internal temperature of the pork has reached 145 degrees Fahrenheit before removing it from the slow cooker.
  • Let the pork tenderloin rest for 10 minutes before slicing and serving: This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

This slow cooker garlic and herb pork tenderloin is an easy and delicious weeknight meal. It's made with just a few simple ingredients, and it cooks up tender and juicy every time. Serve it with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
