SLOW-COOKER HOPPIN' JOHN RECIPE - (4.3/5)

Slow-Cooker Hoppin' John Recipe - (4.3/5) image

Provided by VerneJ

Number Of Ingredients 7

4 strips thick-cut bacon, diced
1 small onion
1/2 teaspoon crushed red pepper
1 cup dried black-eyed peas, rinsed and picked over
1 (15-ounce) can diced tomatoes, drained
1 1/2 cups long-grain rice
1 teaspoon salt

Steps:

  • Place bacon in a saucepan and cook over medium heat until just beginning to crisp. Add onion and cook, stirring, until softened, about 5 minutes. Scrape bacon, bacon fat and onion into slow cooker. Add crushed red pepper, peas, and 4 cups water and stir to combine. Cover and cook on low until peas are nearly tender, 3 to 4 hours. Stir in tomatoes, rice, and salt. Cover and continue to cook just until rice is tender and has absorbed all liquid, 1 to 1 1/2 hours. Fluff with a fork and serve.

Tips:

  • Use high-quality ingredients for the best flavor. Organic and locally-sourced vegetables are ideal.
  • Don't overcrowd the slow cooker. If it's too full, the food won't cook evenly.
  • Cook on low for the best results. High heat can make the chowder tough and overcooked.
  • Add the rice during the last hour of cooking. This will prevent it from becoming too mushy.
  • Season to taste. Add more salt, pepper, or other spices as desired.

Conclusion:

Slow cooker Hoppin' John chowder is a delicious and easy-to-make dish that is perfect for a cold winter day. It's also a great way to use up leftover ham or bacon. The combination of flavors and textures in this chowder is sure to please everyone at your table. So next time you're looking for a hearty and flavorful soup, give this recipe a try.
