SLOW COOKER MEDITERRANEAN VEGETABLE STEW

Slow Cooker Mediterranean Vegetable Stew image

If you want to use this recipe, but have it done in a smaller amount of time, just use a regular pot.

Provided by LikeItLoveIt

Categories     Stew

Time 9h5m

Yield 8 serving(s)

Number Of Ingredients 16

1 butternut squash, peeled, seeded and cubed
2 cups cubed eggplants
2 cups cubed zucchini
1 (10 ounce) package frozen okra, thawed
1 (8 ounce) can tomato sauce
1 cup chopped onion
1 ripe tomatoes
1 carrot, sliced thin
1/2 cup vegetable broth
1/3 cup raisins
1 garlic clove
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground cinnamon
1/4 teaspoon paprika

Steps:

  • In a slow cooker combine butternut squash, eggplant, zucchini, okra, tomato sauce, onion, tomato, carrot, broth, raisins, garlic, cumin, turmeric, red pepper, cinnamon and paprika.
  • Cover and cook on low for 8 to 10 hours, or until vegetables are tender, but still crisp.

Tips:

  • Rinse lentils: Before cooking, rinse lentils in a fine-mesh sieve to remove any dirt or debris. This step helps ensure that your lentils are clean and ready to cook.
  • Use vegetable broth: Vegetable broth adds flavor and depth to the stew. If you don't have vegetable broth on hand, you can substitute water. However, the stew will be less flavorful.
  • Sauté the vegetables: Sautéing the vegetables before adding them to the slow cooker helps to caramelize them and develop their flavor. This step is optional, but it's worth the extra effort.
  • Don't overcook the lentils: Lentils are a delicate legume, and they can easily overcook. Once they are tender, they are done. Overcooked lentils will become mushy and lose their shape.
  • Serve with your favorite toppings: This stew is delicious on its own, but it's even better when served with your favorite toppings. Some popular options include yogurt, feta cheese, pita bread, and lemon wedges.

Conclusion:

This slow cooker Mediterranean lentil stew is a hearty, flavorful, and healthy meal that's perfect for a busy weeknight. It's easy to make and can be tailored to your own taste preferences. With its combination of lentils, vegetables, and spices, this stew is a nutritional powerhouse that's sure to please everyone at the table. So next time you're looking for a quick and easy meal that's both delicious and healthy, give this slow cooker Mediterranean lentil stew a try.
