Time 8h30m

Yield 9 serving(s)

Number Of Ingredients 9

2 teaspoons fennel seeds, crushed
1 teaspoon dried oregano
1 teaspoon paprika
1 1/2 teaspoons chopped garlic
1/2 teaspoon salt
1/4 teaspoon pepper
2 lbs pork loin roast, boneless
4 medium sweet potatoes, peeled and cubed (1/2 inch cubes)
1 cup chicken broth

  • Rub into pork.
  • Put potatoes in the crock pot.
  • Place pork on top of potatoes.

Tips:

  • For a crispy skin on the pork loin, pat it dry thoroughly before searing it in a hot skillet. Sear the pork over high heat for a few minutes per side, or until it is browned all over.
  • If you don't have a slow cooker, you can cook the pork loin in a covered roasting pan in a preheated oven at 325°F for 3-4 hours, or until it reaches an internal temperature of 145°F.
  • To make the sweet potatoes more flavorful, toss them with a mixture of olive oil, salt, pepper, and any other desired seasonings before roasting them.
  • If you like a sweeter glaze, you can add more brown sugar or maple syrup to the sauce.
  • Serve the pork loin and sweet potatoes with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

This slow cooker pork loin roast with brown sugar and sweet potatoes is an easy and delicious meal that is perfect for a busy weeknight. The pork loin is cooked to perfection in the slow cooker, and the sweet potatoes are roasted until they are tender and caramelized.
