This is one of my own recipes, and one that I'm particularly proud of. It's not very spicy, so you can alter the spices as you like. This is great served with corn bread, and the leftovers make great nachos! I'm the only vegetarian in the family, but everyone else loves it!

MEATIEST VEGETARIAN CHILI FROM YOUR SLOW COOKER

Categories     Tofu

Number Of Ingredients 15

1/2 cup olive oil
4 onions, chopped
2 green bell peppers, seeded and chopped
2 red bell peppers, seeded and chopped
4 cloves garlic, minced
1 (14 ounce) package firm tofu, drained and cubed
4 (15.5 ounce) cans black beans, drained
2 (15 ounce) cans crushed tomatoes
2 teaspoons salt
1/2 teaspoon ground black pepper
2 teaspoons ground cumin
6 tablespoons chili powder
2 tablespoons dried oregano
2 tablespoons distilled white vinegar
1 tablespoon liquid hot pepper sauce, such as Tabasco™

Steps:

  • 1Heat the olive oil in a large skillet over medium-high heat. Add the onions; cook and stir until they start to become soft. Add the green peppers, red peppers, garlic and tofu; cook and stir until vegetables are lightly browned and tender, the whole process should take about 10 minutes. 2Pour the black beans into the slow cooker and set to Low. Stir in the vegetables and tomatoes. Season with salt, pepper, cumin, chili powder, oregano, vinegar and hot pepper sauce. Stir gently and cover. Cook on LOW for 6 to 8 hours.

Tips:

  • Use a variety of beans. This will give your chili a more complex flavor and texture. Some good options include black beans, kidney beans, pinto beans, and garbanzo beans.
  • Don't be afraid to experiment with different vegetables. In addition to the usual suspects like onions, peppers, and tomatoes, you can also add things like sweet potatoes, corn, or zucchini. Just make sure to chop them into small pieces so they cook evenly.
  • Use a good quality vegetable broth. This will make a big difference in the flavor of your chili. If you don't have any on hand, you can use water, but the flavor won't be as rich.
  • Season your chili to taste. This means adding salt, pepper, and other spices until it reaches the desired flavor. Be careful not to over-season it, though, as you can always add more but you can't take it away.
  • Let your chili simmer for at least 30 minutes. This will allow the flavors to meld together and develop. The longer you simmer it, the better it will taste.
  • Serve your chili with your favorite toppings. Some popular options include sour cream, shredded cheese, diced avocado, and chopped cilantro.

Conclusion:

Slow cooker vegetarian chili is a delicious and easy meal that is perfect for a busy weeknight. It is also a great way to use up leftover vegetables. With a few simple ingredients and a little bit of time, you can create a hearty and flavorful chili that the whole family will enjoy. So next time you're looking for a quick and easy meal, give this slow cooker vegetarian chili a try.
