SLOW ROAST PORK SHOULDER WITH HERB RUB

Time 12h

Yield 10 servings

Number Of Ingredients 9

6 tablespoons mixed finely chopped robust herbs (like thyme, rosemary, sage and parsley)
3 garlic cloves, finely chopped
3/4 cup brown sugar
1/2 cup, plus 1 tablespoon sea salt
1 tablespoon crushed black peppercorns
A 7-pound pork shoulder, skin on, boned
5 bay leaves
Rosemary applesauce
Crusty bread rolls, for serving

Steps:

  • Mix together herbs, garlic, 1/4 cup brown sugar, 1 tablespoon sea salt and crushed peppercorns.
  • Untie the pork if rolled. In a large bowl, thoroughly dissolve 1/2 cup salt and 1/2 cup brown sugar in 2 quarts of cold water. Add bay leaves and 2 tablespoons of herb mixture. Place pork in a container or strong sealable bag and add this brine to completely cover. Cover or seal well and chill for from 8 hours to overnight.
  • Remove the pork from the brine (discard the brine) and dry thoroughly. Cover with the remaining herb mixture, patting it in all over, then use kitchen twine to roll up pork and secure it tightly.
  • Heat the oven to 225 degrees. Prepare a triple layer of aluminum foil large enough to comfortably enclose the pork. Put the rolled pork on the foil, skin/fatty side up. Gather the foil, scrunching it over to form a loose but well-sealed parcel. Place in a roasting pan in the oven. Take the first check for the internal temperature after 8 hours. For very tender meat that can be sliced, it should be 160 degrees and will probably take 10 hours. Check more often if needed. For a "pulled pork" consistency, the internal temperature should be 200 degrees and it will take about 12 hours.
  • Rest the meat 20 minutes before unwrapping completely. Warm the applesauce and the rolls. Slice the pork not too thin (removing the twine as you go) and put in the sliced rolls with some of the cooking juices and lots of applesauce.

SLOW-ROASTED PORK SHOULDER

Time 5h45m

Yield about 6 main course servings (

Number Of Ingredients 7

2 heaping tablespoons black peppercorns
25 cloves garlic (about 2 heads), peeled
10 whole cloves
3/4 cup vegetable oil
1 bone-in pork shoulder (about 7 pounds)
Kosher salt, as needed
White distilled vinegar, as needed

Steps:

  • Preheat the oven to 275 degrees F.
  • In a food processor, combine the peppercorns, garlic, and cloves and puree. While the motor is running, drizzle in the oil until a paste is formed. Using a rubber spatula, scrape the garlic paste into a small bowl.
  • Place the pork butt on a work surface and season all over generously with salt. Rub all over with the garlic paste. Place in an oven-safe roasting bag and close with a twist tie. Place in a large roasting pan, and cook until tender, about 5 hours.
  • Remove roast from the oven. Slip the oven-roasting bag off the meat and discard. Transfer the cooking liquid to a medium saucepan. Skim the fat from the cooking liquid with a ladle or de-greaser. Bring to a boil, lower the heat, and simmer to thicken the juices slightly.
  • Raise the oven to 400 degrees F. Return the pork, in the roasting pan, to the oven. Continue roasting, basting frequently with the simmering cooking liquid, until well-browned, about 30 minutes. If there is any cooking liquid left, pour it over the pork.
  • Remove pork from the oven and let it rest at room temperature for 10 minutes. With the pork drippings you may make a vinegar sauce using this formula: for every 1/2 cup of drippings, whisk with 3 tablespoons vinegar and 1/4 teaspoon salt. Either carve the pork into thin slices, or, using 2 forks, pull into small pieces. Serve with the vinegar sauce on the side.

SLOW COOKER HERB PORK ROAST

Slow Cooker Herb Pork Roast image

OH, the garlic was so good in this roast! We had it for supper that night and then the next day for sandwiches! I did not cook mine as long just depends on your cooker. Update: the photo I took on March 09, 2004 makes me think I roasted this in the oven. If so, I would have roasted it to 145 degrees and let it rest to finish cooking.

MEAL PREP SLOW-ROASTED PORK SHOULDER

Meal Prep Slow-Roasted Pork Shoulder image

This make-ahead pork shoulder recipe has endless uses. Cook it on a weekend and you'll be set for easy-prep meals throughout the week. By roasting the pork until tender, and then covering it to braise for 30 minutes, you get a beautifully browned piece on top that you can slice for a hearty dinner plate or sandwiches, and also a shreddable juicy portion on the bottom--perfect for tacos, BBQ sandwiches and salads. We kept the seasoning simple so you can add your favorite herbs and spices the second time around.

Provided by Food Network Kitchen

Time 5h

Yield 8 to 10 servings

Number Of Ingredients 2

One 6- to 7-pound bone-in pork shoulder
Kosher salt and freshly ground black pepper

Steps:

  • Put a large ovenproof Dutch oven, without the lid, into the oven and preheat to 425 degrees F.
  • Meanwhile, rub the pork all over with 2 tablespoons salt and 1 teaspoon pepper.
  • Once the oven is preheated, carefully remove the Dutch oven and add the pork to it fat-side down. Roast until golden all over, 45 minutes. Reduce the oven temperature to 300 degrees F and flip the pork so it is fat-side up. Continue to roast until the internal temperature is about 175 degrees F, about 3 hours. Cover the pot with the lid and continue to cook until the internal temperature is 195 to 200 degrees F, about another 30 minutes. Remove the pot from the oven, uncover and let rest until the meat is cool enough to handle, about 30 minutes.
  • Transfer the pork to a cutting board. Skim off the fat from the liquid at the bottom of the pot with a spoon or ladle and discard it. Reserve the liquid for re-warming the meat.
  • Pull the meat from the bone and discard it. The part of the meat that was in the bottom of the pot and cooks in the liquid is perfect for shredding with two forks. The top part that roasts for most of the cooking time should be sliced in to 1/2-inch pieces for browning in other recipes Refrigerate in airtight containers for up to 5 days.

Tips:

  • Choose the right cut of pork: The best cut for slow-roasting is a pork shoulder, also known as a pork butt. This cut is well-marbled with fat, which helps to keep the meat moist and flavorful during the long cooking process.
  • Use a flavorful rub: A good rub will help to enhance the flavor of the pork. Some popular rub ingredients include garlic, paprika, cumin, chili powder, and oregano.
  • Sear the pork before roasting: Searing the pork before roasting helps to create a flavorful crust and lock in the juices. To sear the pork, heat a large skillet over medium-high heat and sear the pork on all sides until browned.
  • Slow-roast the pork at a low temperature: The ideal temperature for slow-roasting pork is between 275°F and 300°F. This low temperature allows the pork to cook slowly and evenly, resulting in tender and juicy meat.
  • Let the pork rest before serving: After the pork is finished roasting, let it rest for at least 15 minutes before serving. This allows the juices to redistribute throughout the meat, resulting in a more flavorful and tender dish.

Conclusion:

Slow-roasted pork shoulder is a delicious and versatile dish that can be enjoyed in a variety of ways. Whether you serve it on a bun with barbecue sauce, slice it thin for tacos, or shred it for burritos, slow-roasted pork shoulder is sure to be a hit. With a little planning and effort, you can easily make this dish at home and enjoy the delicious results.
