SMOKED PAPRIKA SWEET POTATOES (PUREE OR MASHED)
Seriously, there aren't words to describe how delicious this is. I first had it in a local gourmet organic restaurant, and couldn't get over how delicious it was. I later found the recipe on the web and was surprised how simple it was. Buying some nice smoked paprika is a MUST, don't even bother trying it without it. The flavor from the smoked paprika combined with the sweetness of the potatoes makes the dish extraordinary. (Don't worry if your grocery store only sells "yams", in north America yams and sweet potatoes are the same thing)

Steps:
- Pierce washed potatoes, wrap in foil, place on baking tray in oven at 400 degrees for 1 hour or until very tender.
- When cooled just enough to handle, peel off the skin and cut into chunks that fit your food processor or extremely powerful blender.
- Melt the butter and the spices together in the microwave.
- Blend the potato with the melted spiced butter and the cream following the instructions of your processor or blender, serve when blended throughout.
- *I used an extremely high powered blender (a vita mix) and had to stop and stir while pureeing multiple times so as to not burn out the motor. If it is too thick, add some more cream or milk to get it to the consistency you want it. Feel free to add more smoked paprika if you enjoy the flavor as much as I do!
OLIVE BRANCH SMOKED BEEF TENDERLOIN, OLIVE OIL MASHED POTATOES, ROASTED CHILI AND OLIVE RAGOUT
Steps:
- Prepare a smoker using olive branches. Place the beef tenderloin in the smoker and smoke for 20 minutes.
- Preheat the oven to 350 degrees F.
- Pat the beef dry and sprinkle with salt and pepper. Heat the butter and oil in a roasting pan over moderately-high heat until the foam subsides. Then brown the beef well on all sides, about 10 minutes. Put the roasting pan with the beef in the middle of the oven and roast until an instant-read thermometer inserted diagonally 2 inches into the center registers 130 degrees F for medium-rare, about 30 minutes.
- Transfer to a cutting board and let stand 10 minutes. Then cut into 1/2-inch-thick slices.
- To serve, first place the Olive Oil Mashed Potatoes on a plate. Then lean 2 slices beef tenderloin on the potatoes. Place a large spoonful of the Roasted Chili and Olive Ragout around or on top. Garnish with watercress.
- Peel and quarter the potatoes. Put the potatoes and 1 tablespoon salt in a 3-quart pot and cover with cold water by 1 inch. Bring to a boil, covered with the lid, and then reduce the heat and simmer, partially covered, until the potatoes are very tender, 20 to 25 minutes.
- Drain the potatoes in a colander and return to the pot. Add the olive oil and olives, and season with salt and pepper. Mash with a potato masher until smooth.
- Heat 2 tablespoons olive oil over medium-high heat in a saute pan. Add the red onions and cook, stirring occasionally, until the onions are golden brown, about 6 minutes. Remove from the heat. Add the rest of the olive oil and the olives, parsley and all the roasted peppers. Season with salt and pepper.

Steps:
- For the smoked paprika butter: Combine the butter, paprika, salt and pepper in a bowl. Roll into a log, wrap in waxed paper or parchment and refrigerate until very cold.
- For the mashed potatoes: Put the potatoes in a large pot, cover by 2 inches with cold water and add 2 tablespoons kosher salt. Bring to a boil and cook until fork-tender, about 35 minutes. Drain the potatoes, run through a food mill set over a large bowl and rice until very fine.
- Combine the milk and heavy cream in a small saucepan and bring to a simmer over low heat.
- Put the potatoes back in the pot, place the pot back over low heat and, using a wooden spatula, stir the potatoes to dry them out. Begin adding the cold paprika butter little by little, vigorously stirring with a wooden spoon until the butter is incorporated. (Adding the cold butter slowly will create an emulsion.) Slowly stir in the warm milk mixture bit by bit, and then switch to a whisk and whisk until light and fluffy. Fold in the chives and season with salt and pepper.

Steps:
- Put 1 gallon of water in six-quart stockpot, add 1 tablespoon salt and bring to a boil over high heat. Add potatoes and cook until fork-tender, about 25 minutes. Drain, reserving 1 cup cooking water.
- Smoke potatoes to taste in a smoker, according to manufacturer's instructions. If you do not have a smoker, set a 13-by-16-inch aluminum roasting pan with a rack on the stove top so that it spans 2 burners. Scatter 2 tablespoons ground hickory, apple or cherry wood chips (designed for stove-top smokers) evenly in pan. Lay a double thickness of aluminum foil over rack, and crimp any overhanging foil around edges. Arrange potatoes in a single layer on foil. Cover pan tightly with 2 sheets of aluminum foil laid side by side, if necessary. Turn both burners to medium-low, and smoke potatoes for 15 minutes.
- Transfer potatoes to a large bowl, and mash them with a fork or pass them through a ricer or food mill. Add 1 teaspoon salt, butter, cream and 1/2 cup potato cooking water, whip until thoroughly combined. Add more cooking water, 2 tablespoons at a time, until potatoes reach a smooth, fluffy consistency. Season with salt and ground pepper to taste.

Tips:
- Choose the right potatoes: Yukon Gold or Russet potatoes are best for mashed potatoes because they have a smooth, creamy texture. Make sure to scrub the potatoes well before boiling them to remove any dirt or debris.
- Boil the potatoes until they are tender: The potatoes should be cooked until they are easily pierced with a fork. Overcooked potatoes will be mushy and watery.
- Drain the potatoes thoroughly: Once the potatoes are cooked, drain them well and let them steam dry for a few minutes. This will help to remove any excess water and make the potatoes more creamy.
- Mash the potatoes until they are smooth: Use a potato masher or ricer to mash the potatoes until they are smooth and creamy. Avoid using a food processor or blender, as this will make the potatoes too gluey.
- Add butter, milk, and seasonings to taste: Start by adding a small amount of butter and milk and then gradually add more until the potatoes are creamy and flavorful. Season the potatoes with salt, pepper, and garlic powder to taste.
- Smoke the potatoes for extra flavor: If you have a smoker, you can smoke the potatoes for extra flavor. Simply place the potatoes in a smoker and smoke them for 30-45 minutes, or until they are tender and smoky.
Conclusion:
Smoked mashed potatoes are a delicious and easy side dish that can be served with a variety of meals. They are perfect for holidays, potlucks, or any special occasion. With a few simple tips, you can make the perfect smoked mashed potatoes that your family and friends will love.
