CRUNCHY SMOKED SWEET POTATO CHIPS
Coat chunky pieces of sweet potato with cornmeal or polenta and paprika for a smoky, crispy side dish

Steps:
- Heat oven to 200C/180C fan/gas 6. Cut 1.5kg (about 7) sweet potatoes into chunky chips and put in a large bowl. Drizzle with 3 tbsp vegetable oil, then sprinkle with 2 tsp sweet smoked paprika, 2 tbsp fine cornmeal or polenta and plenty of seasoning.
- Toss until well coated, then divide the chips between 2 large baking trays lined with baking parchment. Cook for 35 mins until golden and crunchy, tossing halfway through cooking.

SMOKEY PARMESAN SWEET POTATO CHIPS
After trying several potato chip recipes, this one is a collage of the most successful recipes I have tried. The recipe could easily be modified with additions of other spices to suit any taste or any meal. These are great with burgers and are much healthier than traditional chips!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Peel sweet potato with a vegetable peeler and discard skin. Continue using peeler to create thin strips of sweet potato; transfer to a large bowl. Drizzle strips with olive oil; toss to coat. Mix Parmesan cheese, kosher salt, pepper, paprika, and garlic powder into sweet potato strips; toss to coat evenly. Spread coated sweet potato strips evenly onto the prepared baking sheet.
- Bake in the preheated oven until sweet potato chips are crispy, 20 to 25 minutes.
