1 teaspoon Dijon mustard
1 lemon, zested and juiced
1 tablespoon white wine vinegar

Salt and freshly ground black pepper
1/4 cup olive oil
1 tablespoon capers

Steps:

  • In a large pot of water over medium heat, add the asparagus spears and steam until barely tender, about 4 minutes. Drain and set aside.
  • Meanwhile, make the dressing: Put the egg yolks in a small bowl and break them up with a fork until no clumps remain. 4 cloves garlic, sliced thin
2 tablespoons lemon juice

  • Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C).

4 (10-inch) metal or wooden skewers (soak wooden skewers in water 30 minutes)

Steps:

  • Prepare a charcoal grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas).
