She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

1 (2 1/2 pound) tenderized round steak, cut into 6 pieces
salt and ground black pepper to taste
1 cup all-purpose flour, divided
1 teaspoon garlic powder, or to taste
½ cup cooking oil, divided
1 large onion, sliced
1 cup water
1 teaspoon beef base (such as Better than Bouillon®)
1 teaspoon Worcestershire sauce
2 cups milk

Steps:

  • Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
  • Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
  • Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.
  • Add onion slices to the same skillet and stir, coating onions with pan drippings, until onion slices have separated and are just beginning to soften, about 2 minutes. Move onions to one side of the skillet and return browned steak pieces to the skillet. Spread steak evenly in the skillet and place onions on top.
  • Stir together water, beef base, and Worcestershire sauce in a microwave-safe container. Microwave on high for 1 minute, stir, and pour into the skillet. Cover, reduce heat to a simmer, and cook until the steak is tender, about 45 minutes.
  • Remove the steak from the skillet and add reserved 1/2 cup of flour to the pan drippings. Increase heat to medium; stir briskly and cook until bubbly, 2 to 3 minutes.
  • Stir in milk and keep stirring until gravy bubbles again. Return steak, onions, and any accumulated juices to the skillet, cover, and reduce heat to a simmer. Simmer, stirring occasionally, until flavors are well combined, about 10 minutes.

1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon onion powder
4 pieces cube steaks (butcher tenderized)
1 cup flour
1/2 cup oil
2 cups water
1 beef bouillon cube
1 large yellow onion, sliced rings

Steps:

  • In small bowl mix 4 seasonings.
  • Place flour in a flat surfaced dish (save unused flour for smothering).
  • Sprinkle front and back side of each steak piece and rub deep into groves of steak.
  • Heat oil to medium high in skillet (cast iron is best).
  • Dredge each piece in flour, press in with finger tips. Re-dredge in flour again and place carefully in hot oil for 1 minute and then turn back heat to medium.
  • Fry steak 4-5 minutes on each side. Remove, drain on a separate plate.
  • Remove all but 2-3 Tbs of oil, over medium high heat, sprinkle with 3 Tbs flour, whisking until well mixed and roux browns.
  • Add water, bouillon cube and remaining seasoning. Mix until gravy begins to thicken slightly. Test taste for spice as this is the time to adjust (salt or water).
  • Replace steak back in gravy and spread onion rings over the tops.
  • Cover and simmer 30-40 minutes.

1/2 cup flour
1 teaspoon salt
1 teaspoon black pepper
2 lbs top round steaks or 2 lbs bottom round steaks, about 3/4 inch thick
1 tablespoon vegetable oil
3 large onions, thinly sliced
2 bay leaves
3 sprigs fresh thyme or 1/2 teaspoon dried thyme, crumbled
1/4 cup beer
1 cup beef stock or 1 cup beef broth

Steps:

  • Mix the flour, salt and pepper together.
  • Pound this mixture into the meat well.
  • Cut the meat into 4-6 pieces.
  • Heat the oil in a heavy skillet and cook the steaks in batches over medium-high heat until brown on both sides.
  • Remove the meat and reduce the heat to medium.
  • Add the onions and cook until limp and golden.
  • If the pan is dry, add a few tablespoons of water to the skillet.
  • Lay the meat over the onions and add the bay leaves, thyme, beer and beef stock.
  • Cover tightly and reduce the heat to low.
  • Simmer gently for 30-40 minutes until the meat is very tender.
  • Do not let it boil.

2 large white onions, sliced in rings
1/4 cup distilled white vinegar
1 cup chicken stock
1 stick unsalted butter

Steps:

  • Cut beef tenderloin into 3-ounce medallions and pound to form scaloppini.
  • In a large bowl, combine 1/4 cup olive oil, garlic, oregano, and 2 tablespoons adobo. Add the meat, stirring to coat evenly. Place in the refrigerator and let marinate for at least 12 hours.

This is a meat and gravy all in one dish. It's key to keep enough liquid in your skillet while cooking to provide gravy when it's done. You can use basically any cut of steak, because of the low & slow cooking method, any cut will turn out tender.

2-3 lb steak, cut into approx 3 inch cubes
2 tsp garlic powder
2 tsp mrs. dash, table blend
1 tsp pepper
1 Tbsp olive oil
2 Tbsp flour
1 Tbsp worcestershire sauce
1/2 c carrots, cubed
1/2 c celery, finely chopped
1/2 c sweet onion, roughly chopped
2 c approx. of water or beef broth
8 oz frozen peas, optional
1-2 c mushrooms, sliced, optional

Steps:

  • 1. Dice carrots, celery and onion.
  • 2. Cut meat into large cubes, drizzle with olive oil. Season with garlic, onion pwd., mrs. dash, & pepper. Rub to coat meat well, then sprinkle enough flour to lightly coat meat. Drizzle with a little Worcestershire sauce.
  • 3. Place steak in a large cast iron or oven proof skillet, baking dish or dutch oven. Add vegetables on top. Pour enough hot water into pan to come almost to top of meat, cover bake 400* for 30 min., reduce to 325* bake for 1 1/2 hours, checking liquid level half way through. Add more water or broth if level is very low.
  • 4. Remove from oven, add peas and mushrooms if desired, stir in with meat, add more water or broth to bring liquid back up if needed and simmer on stove top for about 20 min. IF NOT adding mushrooms or peas, go straight to next step.
  • 5. Remove from oven, if broth is too thin, thicken with a cornstarch/water mix (Use 1 tbsp. cornstarch with 1 c cold water or milk) and simmer for about 5 min. Season with salt & pepper to taste. TIP: To darken your broth, add a tsp of Kitchen Bouquet at end of cooking.
  • 6. Serve over potatoes, rice or pasta.

1 1/2 pounds chuck eye or blade steaks
1/2 cup all-purpose flour
2 cups thinly sliced onion

  • Cook bacon in 1 tablespoon oil in a large heavy skillet over medium heat until crisp. Drain on paper towels, reserving fat in skillet, then crumble.
  • Meanwhile, pound steaks 1/4 inch thick between sheets of plastic wrap using flat side of a meat pounder. Snip through any gristle with kitchen shears (to prevent curling), then pat steaks dry.
  • Mix together flour, 1 teaspoon salt, and 1/4 teaspoon pepper and dredge steaks on all sides, shaking off excess.
  • Heat reserved bacon fat over medium-high heat until it shimmers, then brown steaks on both sides in batches; transfer to a plate.
  • Add onion to skillet with remaining tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook over medium heat, stirring frequently and scraping up brown bits, until softened and browned, about 10 minutes.
  • Add steaks with any meat juices and water and bring to a boil. Simmer, tightly covered, over low heat until meat is very tender, about 1 1/4 hours. 1 1/2 lbs deer tenderloins
flour
2 beef bouillon cubes
1 1/2 cups water
white minute rice

Steps:

  • Season tenderloin with salt/pepper/garlic to taste.
  • Lightly flour and brown in oil.
  • Put in casserole dish with bullion and water; cover and put in oven to smother about 2 hours or till tender.
  • Serve over rice.

6 cube steaks or tenderized round steak
original dale's seasoning or worcestershire sauce
1/2 cup of all purpose flour
6 turns of the pepper grinder
1 teaspoon of lawry's seasoned salt
2- 3 tablespoons of canola oil
1 medium green pepper, chopped
1 medium onion, chopped
1 can of coca-cola classic
1 tablespoon of tomato paste
1 tablespoon of better than bouillion beef base or beef bouillon granules
1/2 teaspoon of dried thyme, crushed
1/2 teaspoon of dried rosemary, crushed
1/4 to 1/2 teaspoon of cajun seasoning (like slap ya mama), or to taste
1 (14.5 ounce) can of diced tomatoes

Steps:

  • 1. Pour Dale's seasoning or Worcestershire sauce on tenderized round steak and let sit for 20 minutes. Mix the flour, seasoned salt, and pepper. Heat 2 tablespoons of oil in a heavy bottomed, lidded skillet over medium high heat. You'll need that lid here in a bit. Drain the steaks and dredge then lightly in the flour mixture, cooking them in the hot oil, 2 or 3 at a time, without crowding them, until browned, about 3 minutes per side. Set aside.
  • 2. In that same skillet and adding additional oil if needed to equal 1 tablespoon, Add the green pepper and onion and cook for about 5 minutes, until tender. Pour in the cola and turn skillet up to high. Add the tomato paste, beef base or bouillon, thyme, rosemary and Cajun seasoning, stirring until blended in. Add the diced tomatoes, bring back up to a boil, reduce heat to medium and allow to simmer until reduced slightly.
  • 3. Reduce heat to a low simmer and return the steaks to the skillet one at a time, turning to coat both sides and stacking to the side until all steaks have been coated. Spread them out, cover and cook over medium low for 1-1/2 hours or until tender, occasionally shaking the skillet to prevent the steaks from sticking. Do not allow the sauce to boil! You only want it on a very low simmer.
  • 4. Crockpot: This recipe also does well in a slow cooker when using round steak. Cut into strips if desired and prepare as noted except do not return the steaks to the skillet. Add them to the slow cooker and pour the cooked sauce on top. Cook on low for about 6 to 8 hours, or high for 4 to 5 hours, or until tender.
  • 5. Serve over hot cooked noodles, or rice.

4 cube steaks
salt
black pepper
cajun seasoning, to taste (i used almost 1 tablespoon total)
1/4 c flour (approximate)
vegetable oil, for frying
4 c sliced mushrooms (i used button mushromoms, but i think cremini would also be good)
1 medium onion, halved and thinly sliced
1 clove garlic, minced
3 c low-sodium chicken broth
1/4 tsp dried thyme leaves

Steps:

  • 1. Season both sides of cube steaks with salt, pepper and Cajun seasoning. Rub a little flour into both sides of each cube steak.
  • 2. Heat vegetable oil in skillet over over medium heat. Add cube steaks and cook 5 minutes each side. Remove cooked steaks to a platter, and cover with foil to keep warm.
  • 3. Add mushrooms, onion and garlic to skillet with pan drippings, and cook about 5 minutes or until mushrooms and onions are tender, stirring frequently to scrape up browned bits from the skillet. (I added a little Cajun seasoning too, but that wasn't in the original recipe.)
  • 4. Stir 2 tablespoons of flour into the gravy. Add the broth and thyme, and stir well. Cook over medium heat until gravy is thickened. Return cube steaks to skillet and heat several minutes in the gravy, turn and cook other side for several minutes or until heated through and cooked thoroughly. Add a little more broth if the gravy thickens too quickly.

1 lb flat iron steak
1/2 cup zesty Italian dressing, divided
1/3 cup sour cream
4 1/2 teaspoons parmesan cheese, grated
3/4 teaspoon course black pepper
1/4 teaspoon sea salt
2 garlic cloves, chopped
1 large onion, thinly sliced

Steps:

  • Pour 1/4 cup dressing over steak and seal in a Ziploc bag. Refrigerate at least 30 minutes or overnight to marinate.
  • Combine sour cream, 2 tbsp of the remaining dressing, Parmesan cheese, salt and pepper. Refrigerate until serving time.
  • Heat remaining 2 tbsp dressing and garlic in large nonstick skillet on medium heat. Add onions; cook until golden brown, stirring frequently. Remove onions; set aside.
  • Drain steak; discard marinade. Cook steak in same skillet on medium heat 3-4 on each side for medium doneness. Place on cutting board; slice crosswise into thin strips. Serve steak topped with sauce and onions.

2 lb ground beef
1 tsp ea. garlic gran., onion, gran., blk pepper
pinch coarse sea salt
1/2 tsp worchestshire sauce
2 c mushrooms, 1/2 c chopped, 1 1/2 c sliced
1/2 c celery, finely chopped
2 c onion, 1/2 c finely chopped, 1 1/2 c sliced
2-3 c beef broth, homemade or low sodium
olive oil

Steps:

  • 1. Note: If using lean ground beef, you may want to add a couple TBLS of olive oil to the meat to keep it moist during cooking.
  • 2. Place 1/2 chopped mushrooms, & 1/2 c. finely chopped onions, 1/2 c. finely chopped celery & 1 tsp of olive oil in microwavable bowl. Stir ingredients to lightly coat veggies with O.O. Microwave for 2 min. or till nice & tender. Cool.
  • 3. Mix together ground beef, seasoning & micro veggies. Form into oval shaped patties. Fry in skillet till done. Remove from skillet.
  • 4. In same skillet used to cook patties, add 2 TBL of olive oil & saute 1 1/2 c of sliced onions & mushrooms till tender. Remove from skillet. Add alittle more olive oil if needed, add 1/2 c flour & make a roux, scraping bottom of pan to release the yummies, add alittle salt & pepper if desired. Cook on med heat for a couple of minutes to brown roux. Add beef stock stirring till thickened, return sauted onions & mushrooms to pan, mix in.
  • 5. Place patties over a slice of toasted bread, cover with gravy, also great on mashed potatoes.
