SOUTHERN GREEN BEANS AND POTATOES

Southern Green Beans And Potatoes image

If you're looking for green bean recipes, there's a good chance you'll stumble on a Southern interpretation of this soulful side. Our version uses fresh green beans and potatoes, but we have a fun trick-we peel a thin strip around the middle of each potato before cooking for textural contrast and pretty presentation.

Provided by Carla Hall

Time 37m

Yield Serves 4 (serving size: about 1 cup)

Number Of Ingredients 8

2 teaspoons olive oil
1 medium onion, halved and very thinly sliced
2 garlic cloves, sliced
1/4 teaspoon crushed red pepper
3 cups unsalted chicken stock
3/4 teaspoon kosher salt
1 1/2 pounds small red and gold potatoes,a strip peeled from the center of each
1 pound green beans, trimmed

Steps:

  • Heat oil in a 5-quart saucepan over medium-high. Add onion. Cook, stirring occasionally, until just tender, about 2 minutes. Add garlic and red pepper, and cook, stirring frequently, until onion is tender, about 3 minutes.
  • Add stock, salt, and potatoes. Bring to a boil, then reduce to a steady simmer. Simmer 10 minutes or until the potatoes are just tender enough to be pierced with a fork but still firm.
  • Add green beans, cover, and simmer until very tender, about 6 minutes. Use a slotted spoon to transfer the potatoes and green beans to a serving dish. Bring the liquid to a boil, and cook until reduced to 1 cup, about 6 minutes. Spoon over the vegetables, and gently fold to mix. Serve hot.

Yield Makes 4 servings

Number Of Ingredients 4

1 1/2 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces
3 garlic cloves, peeled
1/3 cup extra-virgin olive oil plus additional for drizzling
1 1/2 pounds green beans, trimmed

Steps:

  • Cook potatoes and garlic in a large pot of boiling salted water (3 tablespoons salt for 6 quarts water), uncovered, until tender, 12 to 15 minutes. Transfer to a large bowl with a slotted spoon and coarsely mash with oil and 1/4 teaspoon salt. Keep warm, covered.
  • Cook green beans in boiling water, uncovered, until tender, 6 to 10 minutes (beans may not be bright green). Drain, then stir into mashed potatoes in bowl. Drizzle with oil.

Tips:

  • Choose the right beans: For this recipe, it's best to use fresh, young snap beans. Avoid beans that are old, tough, or have brown spots.
  • Trim the beans properly: Before cooking, trim the ends of the beans. You can also remove any strings from the beans if desired.
  • Cook the beans until tender: Cook the beans until they are tender but still have a bit of a bite to them. Overcooked beans will be mushy.
  • Season the beans well: Season the beans with salt, pepper, and other herbs and spices to taste. Garlic, onion, and paprika are all good options.
  • Don't overcrowd the pan: When cooking the beans, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Serve the beans hot: Snap beans are best served hot. You can garnish them with fresh herbs or a squeeze of lemon juice.

Conclusion:

Snap beans and potatoes are a classic combination that makes a delicious and nutritious side dish. They're easy to make and can be enjoyed by people of all ages. With so many different ways to prepare them, you're sure to find a recipe that you'll love. So next time you're looking for a simple but satisfying side dish, give snap beans and potatoes a try.
