Yield 30

Number Of Ingredients 8

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

Time 2h55m

Yield 24

Number Of Ingredients 16

1 cup butter
2 cups white sugar
3 ½ cups all-purpose flour
2 teaspoons baking powder
⅛ teaspoon salt
1 cup milk
½ teaspoon vanilla extract
½ teaspoon lemon extract
5 egg whites
1 ½ cups white sugar
2 egg whites
1 tablespoon light corn syrup
¼ teaspoon cream of tartar
¼ cup water
1 teaspoon vanilla extract
4 cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan. Sift together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the butter and 1 1/2 cups sugar until light and fluffy. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the 1/2 teaspoon vanilla and lemon extracts.
  • In a large glass or metal mixing bowl, beat 5 egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
  • Pour batter into prepared pan. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • To make the Fluffy White Frosting: Combine 1 1/2 cups sugar, 2 egg whites, corn syrup, and cream of tartar in the top of a double boiler. Add cold water and beat on low speed of electric mixer just until blended. Place over boiling water and beat constantly on high speed about 3 minutes or until soft peaks form. Remove from heat and place over cold water. Add vanilla and beat an additional 3 minutes or until frosting is thick enough to spread.
  • To make the snowballs: Cut cake into 2-inch squares. Trim corners of each square, leaving rounded edges. Spread top and sides with frosting. Sprinkle coconut generously over frosting.

Tips:

  • Use fresh ingredients: The fresher your ingredients, the better your snowballs will taste. This is especially important for the coconut and nuts.
  • Grate your own coconut: Pre-shredded coconut can be dry and flavorless. Grating your own coconut will give your snowballs a much better flavor and texture.
  • Toast your nuts: Toasted nuts add a delicious nutty flavor to snowballs. You can toast them in the oven or in a skillet over medium heat.
  • Don't overmix the dough: Overmixing the dough will make your snowballs tough. Mix just until the ingredients are combined.
  • Chill the dough before shaping: Chilling the dough will make it easier to shape and will help the snowballs hold their shape better.
  • Roll the snowballs in confectioners' sugar: This will give them a classic snowball appearance and will also help to keep them from sticking together.

Conclusion:

Snowballs are a delicious and festive treat that are perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can make snowballs that are sure to impress your friends and family.
