1 3/4 cups sliced leeks (white and pale green parts only; from 2 medium)
2 large garlic cloves, chopped
2 teaspoons chopped fresh thyme or 1 teaspoon dried

1 cup canned vegetable broth
1/2 cup dry white wine
1 15-ounce can diced tomatoes in juice
4 5- to 6-ounce sole fillets

4 tomatoes, sliced
4 yellow tomatoes or 4 orange tomatoes, sliced
1 leek, white part only, well washed and sliced on the diagonal

1 1/4 pounds skinless, boneless sole fillets
3 or 4 very large leeks
Salt, if desired
2 egg yolks
1 cup heavy cream
1/8 teaspoon freshly grated nutmeg
4 drops Tabasco sauce
Freshly ground pepper
2 tablespoons butter
5 tablespoons fish broth (bottled clam broth diluted with a little water may be used as a substitute)
1 cup white butter sauce (see recipe)
