2 tablespoons olive oil
1 3/4 teaspoons kosher salt

1/2 cup sour cream
1/2 cup full-fat Greek yogurt

1 garlic clove, grated
1 tablespoon lemon juice
Black pepper, to taste
2 tablespoons minced chives
Potato chips, for serving

Steps:

  • Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Arrange the onion slices in a single layer on the prepared sheet, leaving room between each. ¼ tsp. (1½ g) fresh thyme leaves, plus more for garnish
8 oz. (225 g) plant-based cream cheese such as Miyoko's, Kite Hill, or Violife
1 tsp. (5 ml) freshly squeezed lemon juice
1 Tbsp. (3 g) dried chopped onions
Homemade or store-bought crispy fried shallots, for garnish (optional)
