1 ¼ cups all-purpose flour
½ cup butter, cut into chunks
½ teaspoon salt
2 tablespoons sour cream
4 fresh peaches - peeled, pitted, and sliced
3 egg yolks
2 tablespoons all-purpose flour
⅓ cup sour cream
1 cup white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Butter a 9-inch pie dish.
  • Place 1 1/4 cups flour, butter, salt, and 2 tablespoons sour cream in a food processor; pulse until mixture comes together in a large ball. Press dough into prepared pie dish to form a crust.
  • Bake in preheated hoven until golden brown, about 10 minutes. Remove pie crust from oven.
  • Reduce oven heat to 350 degrees F (175 degrees C). Arrange peach slices in pie crust.
  • Lightly beat egg yolks in a large bowl. Add in sugar, 1/3 cup sour cream, and 2 tablespoons flour; stir until well-mixed. Pour egg mixture over peaches. Cover pie with aluminum foil.
  • Bake in preheated oven for 50 minutes; remove foil. Continue baking until peach filling is set, about 15 minutes more.

⅓ cup all-purpose flour
¼ teaspoon almond extract
1 tablespoon all-purpose flour
1 (9 inch) unbaked pie crust
4 cups sliced fresh or frozen peaches
¼ cup brown sugar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a medium bowl, stir together the sour cream, white sugar, 1/3 cup flour and almond extract until smooth. Sprinkle 1 tablespoon of flour over the pie crust to prevent it from getting soggy. Alternate layers of peaches and the sour cream mixture, beginning with a layer of peaches and ending with a layer of sour cream.

Dough for single-crust pie
4 cups sliced peeled peaches
2 tablespoons peach preserves
1 cup sugar
1 cup sour cream
3 large egg yolks
1/4 cup all-purpose flour
1 teaspoon vanilla extract
TOPPING:
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup sugar
3 tablespoons chopped pecans
1 teaspoon ground cinnamon
1/4 cup cold butter, cubed

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large bowl, combine peaches and preserves. Transfer to crust. In a small bowl, whisk sugar, sour cream, egg yolks, flour and vanilla. Pour over peaches., Bake for 30 minutes. Meanwhile, in a small bowl, combine flour, sugars, pecans and cinnamon. Cut in butter until crumbly; sprinkle over pie. , Bake until a knife inserted in the center comes out clean and topping is golden brown, 15-20 minutes. Cover edge with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. Cool completely on a wire rack for 3 hours before serving. Store in the refrigerator.

Although this recipe calls for fresh peaches, it has been made at times with canned peaches, but needless to say, fresh peaches are the best! 1 egg, beaten

In 1972 I made this for my husband and it quickly became his birthday dessert. I just made this pie for friends that came to visit from the State of Washington and they loved it too. Can be made with canned peaches BUT I only use fresh! I make the pie crust the day before and have it chilling in the refrigerator ready to be rolled out.

4 cups sliced peeled peaches (7 to 8 medium)

1 pastry dough, for a 1-crust pie your choice
5 -6 ripe peaches, sliced
1 cup sour cream
3/4 cup sugar
3 tablespoons flour
1 egg
1/8 teaspoon nutmeg
1 tablespoon dark rum (I use Myers)
1/4 teaspoon vanilla
1/4 cup butter, melted
1/3 cup flour
1/2 cup light brown sugar, firmly packed

Steps:

  • Preheat oven to 400°F.
  • Fit the pastry into a 9-inch pie pan. Make sure the rim is high.
  • Mix the filling ingredients except for the peaches.
  • Arrange the peach slices evenly in the pie shell, then pour filling mixture over peaches.
  • Bake 25 minutes.
  • While filling is baking, mix streusel ingredients together until combined.
  • After 25 minutes of baking, remove pie from oven and crumble topping over the top.
  • Return to oven.
  • Bake another 20 minutes, or until filling seems mostly set and the topping is lightly browned.
  • Cool, then chill and serve.

This is a good peach pie recipe. This pie is better when fresh peaches are used but today I used canned. Still is good!

4 c peeled & sliced peaches 7 or 8
1 c sugar
5 Tbsp flour
1/8 tsp salt
1/2 c sour cream
1/4 tsp cinnamon
1/4 tsp nutmeg
1 9' double pie crust ( i use my never fail pie crust)

Steps:

  • 1. Spread your peaches in a 9' pastry lined unbaked pie pan. Mix your sugar (reserving 1 Tbsp.) and flour, salt, cinnamon, nutmeg and sour cream. Spread over peaches.
  • 2. Adjust top crust and flute edges. Cut vents in top of crust. Sprinkle reserved sugar on top of crust. Bake at 400 for 40 minutes or until fruit is bubbling out of the top crust vents and crust is golden.
  • 3. Remove from oven and let cool. Can serve with whip cream or ice cream.

Tips:

  • Choose ripe peaches: The best peaches for pie are ripe but still firm. Avoid peaches that are too soft or bruised.
  • Peel the peaches: To peel the peaches, score an X in the bottom of each peach. Then, place the peaches in a pot of boiling water for 1-2 minutes. Remove the peaches from the water and let them cool. Once the peaches are cool enough to handle, peel off the skin.
  • Make sure the sour cream is cold: Cold sour cream will help to keep the pie crust flaky.
  • Don't overmix the dough: Overmixing the dough will make it tough. Mix the dough just until it comes together.
  • Pre-bake the pie crust: Pre-baking the pie crust will help to prevent it from becoming soggy.
  • Let the pie cool before serving: The pie will need to cool for at least 1 hour before serving. This will allow the filling to set.
