½ honeydew melon (seeds removed and cut into 1/3-inch slices)
¼ seedless watermelon (cut into 1/3-inch slices)
2 tablespoons lime juice
1 teaspoon honey
½ teaspoon kosher salt
2 tablespoons extra-virgin olive oil
1 serrano chili pepper (minced)
¼ teaspoon crushed red pepper flakes
1 teaspoon Maldon salt
1/8 teaspoon whole rainbow peppercorns

Steps:

  • Arrange the cantaloupe, honeydew, and watermelon on a large platter.
  • In a small saucepan heat the lime juice, honey, and salt over low heat and cook until the honey has dissolved. Remove the mixture from the heat and cool completely.
  • Whisk the olive oil into the mixture and add the serrano chili pepper and red pepper flakes. Pour the dressing over the melon slices and garnish with the Maldon salt.
  • Put the peppercorns in a small plastic bag and using the bottom of a pot crush them until shattered but not powdery. Sprinkle over the salad.

Juice of 2 limes
Pinch cayenne pepper
Pinch kosher salt
3 cups cantaloupe balls (scooped with a melon baller; about 1 melon)
3 cups honeydew balls (scooped with a melon baller; about 1 melon)
1/4 cup loosely packed fresh mint leaves

Steps:

  • Add the agave, lime juice, cayenne pepper and salt to a large bowl and whisk to combine. Add the cantaloupe and honeydew to the bowl along with the mint leaves and toss to coat with the dressing. Serve as is, or for a more intense flavor, refrigerate for a few hours and up to overnight and toss again before serving.

1/4 cup extra virgin olive oil
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon harissa (or other hot sauce)
1/2 teaspoon serrano chili (seeded, chopped fine)
1/2 teaspoon cumin (kamoun)
1/2 teaspoon paprika (tahmira)
salt & freshly ground black pepper
3 -4 cups watermelon (rine removed, chunked,chilled)
1/2 red onion (sliced thin)
2 tablespoons parsley (fresh-chopped)
2 tablespoons mint (fresh- chopped)
1/4 cup black olives (Moroccan olives, pitted-or other oil cured black olives, coarsely chopped)

250 g fresh champignon mushrooms
1 lemon, juice of
2 cloves cruched garlic
1/2 teaspoon salt
1 (450 g) can hearts of palm
1 (450 g) can artichoke hearts
1/2 cup olive oil
1 teaspoon Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons wine vinegar

Steps:

  • Carefully wash the mushrooms and slice in half.
  • Put into pot with the lemon juice, garlic and salt.
  • Cover and cook on medium heat for about 2 minutes.
  • Shake the pot occasionally.
