SOUTHERN-STYLE BAKED BEANS

I have several recipes for baked beans, and they all seem to suit a particular time of year or occasion. These are the baked beans I traditionally make on Super Bowl Sunday. They go very well with my pulled pork and other dishes on my menu. I do warn you that this recipe makes a LOT of beans. This recipe is easily increased or decreased. Use a 28-ounce can of beans for every six guests.

Yield 18 serving(s)

Number Of Ingredients 8

8 slices bacon, cut in 1-inch pieces
1 medium onion, diced
1/2 medium green bell pepper, diced
3 (28 ounce) cans pork and beans
3/4 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled vinegar or 1/4 cup cider vinegar
2 teaspoons dry mustard or 2 tablespoons Dijon mustard

Steps:

  • Adjust oven rack to lower-middle position. Heat oven to 325 degrees. In a large pan, fry bacon until it is partially cooked and you have about 1/4 cup of drippings. Remove bacon from pan and drain on paper towels.
  • Add onion and bell pepper to drippings in pan and sauté until tender, about 5 minutes. Add beans, bacon and remaining ingredients; bring to a simmer. (If there's not enough room in the pan, add beans and heat to a simmer; transfer to a large bowl and stir in remaining ingredients).
  • Pour flavored beans into a greased 9-by-13-inch (or similar size) oven-proof pan (a large, wide casserole allows the beans to thicken nicely). Bake, uncovered, until the beans are bubbly and the sauce is the consistency of pancake syrup, about 45 minutes to 2 hours, depending on the "juiciness" of the brand of beans you use.
  • Let stand to thicken slightly. Serve warm.

Time 1h

Number Of Ingredients 7

1 large onion, diced
2 (16-ounce) cans pork and beans
3 Tbsp prepared yellow mustard
1/4 c light brown sugar
4 Tbsp ketchup
1 Tbsp lemon juice
1/2 lb bacon strips, cut into 1/2-inch pieces

Steps:

  • 1. IN A DUTCH OVEN, MIX ONION, PORK AND BEANS, MUSTARD, LIGHT BROWN SUGAR, KETCHUP AND LEMON JUICE.
  • 2. TOP WITH THE BACON PIECES. BAKE COVERED, FOR 45 TO 60 MINUTES.

Tips:

  • Soaking the beans overnight: This helps to reduce the cooking time and makes the beans more tender. You can also use a quick-soak method by boiling the beans for 2 minutes, then removing them from the heat and letting them soak for 1 hour.
  • Use a variety of beans: This will give your baked beans a more complex flavor and texture. Some good options include navy beans, pinto beans, black beans, and kidney beans.
  • Add some vegetables: Vegetables like onions, celery, and carrots add flavor and texture to baked beans. You can also add other vegetables like corn, green beans, or bell peppers.
  • Use a flavorful liquid: The liquid you use to cook the beans will also add flavor to the dish. Good options include chicken broth, beef broth, or vegetable broth. You can also use water, but be sure to add some herbs and spices to give it more flavor.
  • Season the beans well: Baked beans should be well-seasoned with salt, pepper, and other spices. Some good options include garlic, onion powder, paprika, and cumin.
  • Slow-cook the beans: Slow-cooking the beans helps to develop their flavor and make them more tender. You can slow-cook the beans in a crock pot or in the oven. If you're cooking them in the oven, be sure to cover the pot so that the beans don't dry out.
  • Serve the beans with your favorite sides: Baked beans are a great side dish for many different meals. Some good options include fried chicken, grilled pork chops, or a baked potato.

Conclusion:

Baked beans are a classic Southern dish that is easy to make and always a crowd-pleaser. With a few simple tips, you can make the best baked beans ever. So next time you're looking for a delicious and hearty side dish, give baked beans a try.
