SOUTHERN FRIED CABBAGE WITH SAUSAGE

Southern Fried Cabbage With Sausage image

This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Provided by MSippigirl

Categories     One Dish Meal

Time 40m

Yield 6 serving(s)

Number Of Ingredients 9

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

Number Of Ingredients 10

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
12 ounces smoked sausage links, such as kielbasa or andouille
1 yellow onion, chopped (1 1/2 cups)
1 tablespoon packed light-brown sugar
2 teaspoons Creole seasoning, such as Tony Chachere's

3 tablespoons apple-cider vinegar
Kosher salt and freshly ground pepper
Whole-grain mustard, for serving (optional)

Stir in half of cabbage and vinegar; season with salt. As mixture begins to reduce in volume, add remaining cabbage; season with salt. Cover and cook, stirring a few times, until cabbage is softened and wilted but still has a slight crunch, about 25 minutes. Season with salt and pepper to taste.

SOUTHERN FRIED CABBAGE

Southern Fried Cabbage image

This is my absolute favorite way to prepare and serve cabbage...only downfall to this recipe is that you can't really control the heat factor! Depending on the season and whether or not the peppers received rain or not determines how hot or mild your dish is, so I only chop 2 jalapenos for this recipe and seed most of them out so...

Provided by Cecilia Rowe

Categories     Sides

Number Of Ingredients 5

1 head of cabbage
6 slice bacon
1 small onion-chopped
2 jalapeno peppers-chopped
salt and pepper to taste

Steps:

  • 1. Fry your (6)bacon slices; while bacon frys, core your cabbage and chop onions and cabbage. Remove bacon from pan and sit aside on paper towel to drain.
  • 2. add chopped onions to bacon drippings in skillet and saute'. Add your chopped cabbage and stir up well coating with onions and bacon drippings. Place lid on cabbage and reduce heat to simmer.
  • 3. chop (2)jalapenos (you may use more or less and you have the option of seeding before chopping). Add your jalapenos to cabbage mixture in skillet, crumble your bacon that was set aside earlier and add to skillet then salt and pepper to taste (I use a lot of pepper at this point-everything is covered)stir together and recover with lid.
  • 4. Your cabbage does not need any water added to skillet and it will cook down so don't be alarmed if your skillet looks super full. You only need to cook this until tender...you don't want to cook all the nutrients out. Don't forget to stir this well, you don't want any cabbage or onion pieces getting burned left on bottom.
  • 5. Best served hot, but left overs the next day are delicious as well...just a bit warmer as they have sat together overnight! Enjoy, this is a wonderful side dish to just about any meal, but my favorite is meatloaf and brisket!

PEGGI'S SOUTHERN FRIED CABBAGE

PEGGI'S SOUTHERN FRIED CABBAGE image

Now I'm from the south. My hubby is a transplant from the north. When we met in Arkansas some 27 years ago, I was boilin' cabbage with bacon in it. This northern guy had to tell me how to fix it. Seems some other southerner had told him. I hope you enjoy it as much as we do.

Provided by Peggi Anne Tebben

Categories     Vegetables

Time 30m

Number Of Ingredients 5

2 Tbsp bacon grease or real butter, not margarine
1/2 head cabbage, cored & cut into about 1" square pieces, no smaller
1/2 large onion, cut into slivers
smidgen (about 1/4 tsp.) sugar
salt & pepper to taste

Steps:

  • 1. Place all ingredients in 10 3/4" cast iron skillet in the order given. Do not mix up at this time.
  • 2. Start out on high heat for a minute or two, until cabbage starts to "give it up",then reduce heat to low & cover skillet.
  • 3. Give it about 5 minutes before you start to stir it in skillet. Then, for the next 10 min, about, stir occasionally so it won't burn. Leave lid on to cook. Don't over stir it or it will just mush & not brown.
  • 4. Cook until it is starting to get translucent & tender-crisp & brown somewhat, as in picture above.
  • 5. Serve with anything. We had it with hamburger steaks & sauted onions today.

Provided by EyeSpy

Categories     Side Dish     Vegetables

Time 35m

Yield 8

Number Of Ingredients 5

1 head cabbage, cored
3 slices bacon, cut into 1/2 inch pieces
¼ cup butter
2 cups chicken broth
salt and ground black pepper to taste

Steps:

  • Chop cabbage into 1- to 2-inch pieces.
  • Cook bacon in an open 8-quart pressure cooker over medium heat until tender, 4 to 5 minutes. Do not crisp the bacon unless you just like it that way. Add butter and stir until melted.
  • Place the chopped cabbage into the pot and pour in chicken broth. Add salt and black pepper to taste and toss the cabbage until coated.
  • Secure the lid to your pressure cooker, place the regulator on top (depending on the type of pressure cooker you have), and turn the heat up to high. When the regulator begins to rock or the cooker reaches full pressure, lower the heat to maintain a gentle rocking motion (15 pounds per square inch). Cook for 3 minutes.
  • Immediately remove the cooker from the heat and use the quick-release method recommended by your cooker's manufacturer to reduce the pressure. Transfer cabbage to a serving dish and serve hot.

Tips:

  • Choose the right cabbage: For Southern cabbage recipes, use a firm, heavy head of cabbage with tightly packed leaves. Green cabbage is the most common type used, but you can also use red or Savoy cabbage.
  • Wash the cabbage thoroughly: Remove any wilted or damaged leaves and rinse the cabbage under cold water. Cut the cabbage into quarters or eighths, depending on the recipe.
  • Cook the cabbage properly: Southern cabbage recipes typically involve cooking the cabbage until it is tender. You can boil, steam, or braise the cabbage, depending on the recipe. If you are boiling the cabbage, add a little salt to the water to help preserve the cabbage's color.
  • Season the cabbage to taste: Southern cabbage recipes often call for salt, pepper, and other spices. You can also add other ingredients to the cabbage, such as bacon, onions, garlic, or tomatoes.
  • Serve the cabbage hot or cold: Southern cabbage recipes can be served hot or cold. Hot cabbage is often served as a side dish with fried chicken or pork chops. Cold cabbage is often served as a salad or slaw.
